2 cups flour

1/3 cup butter (softened)
1 cup sugar
2 eggs
2 ripe bananas mashed
2/3 cups plain yogurt
1/2 cup chopped walnuts (optional)
DIRECTIONS:
In a bowl combine flour, baking powder and baking soda. In a separate bowl mix butter and sugar until well combined.
Add eggs and mashed bananas to butter mixture. Add to flour mixture along with the yogurt and mix together well (until smooth).
Spoon batter into lightly greased baking pan and top with walnuts (if using). Bake at 350 degrees for about 35 minutes or until baked through.

Easy Banana Bread
(6 servings)
1 and 1/4 cups flour
2 eggs
1 cup sugar
1/2 teaspoon salt
1 teaspoon baking soda
3 bananas
8 Tablespoons margarine
1/3 cup walnuts (optional)
Cream sugar and margarine, mash the bananas and add to the mixture.
Beat and add the eggs. Slowly add the flour, salt, and baking soda. Pour into a loaf pan.
Bake at 350 F for 30-45 minutes.

You can't mess this one up!
Grease and base-line a loaf tin measuring 8.5 by 19cm (1 lb capacity), or set 12 paper muffin cases into a muffin tin. Heat the oven to 350F/180C/gas 4. Put 75g (1/3 cup) softened butter, 110g (1/2 cup) caster sugar and 1 large beaten egg into a bowl. Sift in 225g (2 cups) plain (all-purpose) flour and 2 level tsp baking powder. Using an electric mixer, whisk until thoroughly combined. Add the grated rind of 1 lemon and 1 orange. Slice 4 ripe bananas into another bowl, and mash to a pulp. Add to the flour mixture, along with 50g (1/2 cup) chopped walnuts and whisk again thoroughly. Spoon the mixture into the tin or cases and bake until risen and browned, and springs back when pressed with a finger.
A loaf takes about 50 minutes. Leave it to cool in the tin for 10 minutes before turning on to a wire tray.
Muffins take around 15-20 mins.

Banana and Walnut cake
4 medium bananas (approx. 12oz/350g)
6oz/175g walnut pieces
pinch salt
1 rounded teaspoon baking powder
1 level teaspoon ground cinnamon
4oz/110g plain flour
4oz/110g wholewheat flour
1 orange grated zest
1 lemon grated zest
4oz/110g butter at room temerature
6oz/175g soft dark brown sugar
2 large eggs at room temperature
splash milk
1 tablespoon demerara sugar
2lb loaf tin
Method:
Start by pre-heating the oven to gas mark 4/350 Fahrenheit/180 degrees Centigrade. In the meantime, grease the inside of your loaf tin. When the oven's hot, spread the walnut pieces on a baking tray and put them in the oven for seven to eight minutes. Take the walnuts out of the oven and leave to cool. Then, put them in a plastic bag and gently bash them with a rolling pin to make the nuts into smaller pieces. Keep the nuts for later.
Next, mash three of the bananas with a fork and chop the last banana into centimetre chunks. Set these aside for later.
Mix together all the other ingredients, except the milk, nuts and bananas, until the mixture is nice and smooth. You may need an electric whisk for this.
Then fold in the bananas and nuts. If the mixture seems a little dry and doesn't drop easily off the spoon, add a splash of milk. When at the right consistency, pour the mixture into the loaf tin and level the top with the back of the spoon.
Sprinkle some demerara sugar over the top of the cake and put it in the oven for an hour and a quarter to an hour and a half. It should feel springy in the middle when you take it out.
Once cooked, leave to cool for five minutes. Then turn the cake onto a wire rack to cool completely, then slice and serve.

Ingredients
40g/1½oz cherries
75g/3oz sultanas
110g/4oz butter, softened
110g/4oz caster sugar
2 large eggs, preferably free-range
3 large ripe bananas
175g/6oz fine rice flour
50g/2oz cornflour
2 tsp gluten-free baking powder
½ tsp salt
1kg/2lb loaf tin, lined with parchment paper, or 24 small paper muffin cases
Method
1. Preheat the oven to 180C/350F/Gas 4.
2. Wash and dry the cherries. Cut into quarters and mix with the sultanas. Set aside.
3. Cream the butter and sugar together until pale, light and soft. Add the eggs, one by one, and beat well between each addition.
4. Mash the bananas and add to the creamed mixture. Sift the rice flour, cornflour, gluten-free baking powder and salt together and fold carefully into the banana mixture. Very gently, stir in the cherries and sultanas, so that they are evenly distributed through the mixture.
5. Pour the mixture into the loaf tin or into 24 small muffin cases and bake in the oven for about 1¼ - 1½ hours for the loaf, 25 minutes for the mini muffins, until golden on top and a skewer inserted into the centre comes out clean.
6. Remove the loaf from the tin and cool on a wire rack; cool mini muffins on a rack in their paper cases. Slice the loaf into eight slices to serve

One Egg Banana Bread
This banana bread recipe is easy, using one egg and one bowl.
INGREDIENTS:
3 large bananas , well mashed
1 egg
1 stick of butter, melted
1 1/2 cup of flour
1 cup of sugar
1 teaspoon of salt
1 teaspoon of baking soda
1 cup nuts, optional

This is what I do, my hubby loves banana bread and says this one is very good, its moist and delicious and very 'idiot proof'.

PREHEAT OVEN TO 180C
MIX TOGETHER IN A MEDIUM BOWL 8OZ PLAIN FLOUR 2 TEASPOONS OF BAKING POWDER 0.5 TEASPOON OF SALT AND 0.25 TEASPOON OF BICARB OF SODA.
IN ANOTHER BOWL MIX 3 MEDIUM BANANAS (WELL RIPED) MASHED ADD 4 OZ SUGAR 75MLS OF VEG OIL 2 LARGE EGGS AND 1.5 TEASPOON OF VANILLA ESSENCE. MIX TOGETHER WELL. THEN ADD THE BANANA MIXTURE TO THE FLOUR MIXTURE STIR UNTIL BLENDED.. PUT IN A LOAF TIN AND COOK FOR ABOUT 45 MINS OR UNTIL COOKED.
THIS IS FOOL PROOF AND IS DELICIOUS.
