This depends on what the other person's email supports. Many stilll use (or prefer) text only or have disabled features since spammers tend to exploit them. If the receviers email supports HTML, you could use embed src tags to play media from a page of your choice. This could be a midi file or an mp3. What you'd have to do is find someone already hosting the music you want or put it up on a page yourself. A sample of what this would look like in HTML is here:

If their email supports HTML then you can the music.

Keep in mind that this will annoy most people and will make the email take a long time to download.

Soundtrack, HuMMM? How long will the reader be reading? Hour and a half i guess? Yes it is but if they have dial up they will want to kill you...
