whatever makes sense to your business. And keep splitting them down to segments until they are too small to matter (eg revenue generate) or its too much work to justify doing. Segments should be actionable and distinctive otherwise they are not worth doing.
Examples are airlines who invest lots in frequent flyers...

Depends what context
i work in marketing and we Segment audiences (customers) by different characteristics, could be age, geography, socio-demograhic. You could segement by race, religion, sex - anything. Its simply grouping together.
You could segment the TShirts in your wardrobe by colour or brand
