EGGLESS COCOA PUDDING
4 tbsp. cornstarch
1/4 tsp. salt
1/3 c. sugar
3 tbsp. cocoa (or 1 sq. chocolate)
2 c. milk
1/2 tsp. vanilla
1 tbsp. butter
Mix together first 4 ingredients. Add 2 cups milk gradually. Cook over medium heat until thick. Add 1/2 teaspoon vanilla and 1 tablespoon butter. Stir and let cool.

Easy Tender Coconut Water Pudding
Tender coconut - 1 no
Condensed milk - 1/2 tin
Thick coconut milk - 1 1/2 tins
Sugar - 2 tsp
Gelatin - 2 tsp
Break coconut carefully and transfer the liquid without losing any water into a pudding bowl or pudding tray.Add sugar and dissolve fully.Carefully melt the gelatin in little warm water over the stove and mix this into the tender coconut water-sugar mixture.Keep this mixture in the refrigerator to set.
For the sauce:-
Mix together the condensed milk and the coconut milk.Keep in the fridge to chill.
Serving:-
In a serving bowl, cut a square piece of the pudding and top it with the chilled sauce and serve cold.Garnish with a few thin strips of the tender coconut flesh.

Brownie Pudding
1 cup sifted flour
3/4 cup granulate sugar
2 tablespoon cocoa
2 tablespoons baking powder
1/2 teaspoon salt
1/2 cup milk
2 tablespoons salad oil
1 teaspoon vanilla
3/4 cup chopped walnuts
3/4 cup brown sugar
1/4 cup cocoa
1 3/4 cups hot water
Sift together first 5 ingredients. Add milk, oil and vanilla and mix until smooth. Pour into greased 8x8 baking pan. Combine remaining ingredients and pour over batter. Bake at 350 for 45 minutes.

A Happy Kitchen's Eggless Abc Pudding:
50 min 20 min prep
4 servings
1 kiwi fruit
2 cups grated fresh carrots
1 cup grated fresh apples
1 cup mashed bananas
1 tablespoon ghee
2 cups powdered milk (I use the Nido brand)
1 cup water
1 cup sugar
1 teaspoon cardamom powder
2 teaspoons cashews
1. Heat ghee in a heavy saucepan.
2. Toss in the cashewnuts and stir-fry on low flame.
3. In another pan, mix together the milk powder with a cup of water to form a smooth paste.
4. Add the grated apple, carrot and the mashed banana.
5. Let them cook on low flame in milk.
6. Then, stir in the sugar.
7. You will notice that the consistency initially is watery.
8. However, slowly once it starts cooking, the consistency will get dry.
9. Stir in the ghee and you'll see the mixture turn a fairly dry golden-brown mass.
10. Mix in the fried cashews and the cardamom powder.
11. Garnish with slices of fresh kiwi fruit, sliced banana and sliced apples.
12. Serve hot.
13. Enjoy!
