VEGATABLE HOT POT :
1 medium onion
1 medium leek
1 tin of tomatoes
1 cup of green lentils
4 carrotts
3 potatoes
1 veg oxo cube
Tomatoe puree
++++
fry onion and leek in a spray of that one cal oil for 2 min - put them in a caserole dish.
then make the oxo stock cube with 1 pint of boiling water and put into the used frying pan, add 3 table spoons of tomatoe puree and allow to bubble gently whilst you do the rest:
Back to the caserole dish, on top of the onion and leek pour the tomatoes, then pour in the cup of lentils (evenly around the casserole so you have a nice layer) (dont be afraid of lentils they dont taste funny but are very good for you)
Peel and slice the carrotts, layer over the lentils
Peel and slice the potatoes, layer over the carrots
Pour the stock over all of this - leave one inch from the top of the casserole dish (to stop it overflowing whilst cooking)
Put in oven for hour and half - serve with either steamed fish, chicken breast etc etc
It is very tasty. A good way of eating boring veggies.

You can do great stir fries with a little sunflower oil or if you don't want to use that much oil, steam your veggies and add just a couple of drops of toasted sesame seed oil - it's so good!!

You can make a great pasta sauce by softening some onions and garlic in a little oil, adding passata and simmering until it thickens up.

You can make all kinds of good soups by combining different veggies.

You can make a kind of risotto with mushrooms and rice.

If you get big spanish onions, you can roast them and eat them with balsamic vinegar - yum!

Use strong seasonings like garlic, chili, lemon, toasted sesame oil, soy sauce or the flavours get too bland...

There's loads of stuff you can make!!

Good luck!

Courgettes and aubergines (zucchini and eggplant if you're in the US), red cabbage, squashes such as pumpkin and butternut squash, spinach, all types of lettuce, plum tomatoes, cherry tomatoes, olives (in brine), small amounts of couscous, bulghur wheat, quinoa, potatoes, don't forget to drink lots of water.

Try also some dried fruits like dates. They're like toffees, yummy.

I like to take boneless chicken breast place in oven safe baking dish season with garlic and just a touch of southern spice(or the spice of your choice), cook about 2/3 done then add a can of pineapple tidbits or crushed your choice and salsa, very tasty and still low calorie/carb. No need to drain pineapple unless you want to, helps keep breast moist and tender, and it should be 2 parts pineapple to 1 part salsa, for a taste your sure to enjoy.

Hi Im startin SW tonight! Never done it before as Ive always been a WW girl, so Im looking forward to the new diet.

I havent yet started, so I dont have my food lists but going on what you are saying from the list above - any my existing knowledge of Low Fat dieting I would be making the following:

Twice a week I would cook a bag of pasta or rice which I would keep in the fridge with some finely sliced onions and garlic mixed in. I would then make this into pasta/rice salads with various flavours, adding tomato, cucumber, beans, tom puree, tinned toms, tuna etc etc throughout the week. It means there is always something fast to eat, that fits with the diet. You can also microwave it or add a hot sauce to it for a quick hot meal.

Also, I would use the veggie list to make a big pot of soup for the week - its always good to be able to get a mug or two of low cal soup when you get home from work and you are waiting for your evening meal to cook. It warms you up and stops you snacking. It also fills you so you eat less at the meal.

Veggie soup ideas: Basic recipe: Fry the spices first, then add onions and garlic/ginger. Then add chopped veggies, sweat and then add stock. Simmer and blend. You can add some LF cream cheese or quark at the end for a creamier consistency.

Ideas: Curried potato and spinach, potato and leek, carrot and coriander/orange/thyme, winter vegetable (I use a frozen casserole pack for this - it works a treat and just needs a grating of nutmeg at the end), pepper, butter nut squash (lots of coriander seeds in this one!) tomato (add veggies, beans and pasta for a good minestrone) lentil.

Throughout the week:
Breakfasts of fruit and coffee using milk allowance (I find a milky coffee or cappuccino fills me up) Can you eat porridge or cereals?
Maybe if at home and I had time I would eat eggs with wholemeal toast?

Lunches. If at work I would take instant soup or bovril (I assume this is free) to fill up on plus fruit for snacking. Sandwich made with wholemeal bread and canned tuna. Mix quark with lemon juice and grated rind - and then mix in with the tuna. Plenty of black pepper and salad to fill it out. Could you use wholemeal pitta bread? Maybe a tub of pasta salad instead?

Evening meals: Curry made from dry fried spices, tinned toms, diced turkey (I find it tastier and meatier than chicken) Maybe stir in some quark/yoghurt or very low fat cream cheese to make it creamier. Fill it up with veggies like potatoes, mushrooms etc.

Cottage or shepherds pie made with low fat gravy granules, loads of mashed potato (I assume you can eat potato?) and veggies added to the mince to bulk it out. I make this with quorn and hubby doesn't even notice its not meat!

Jacket potato stuffed with home made chilli - using meat or quorn - again with a good tasty sauce you don't notice the lack of meat.

Normal meals of chicken/fish, steamed and served with loads of veggies.

Rissotto. Use a good recipe, just omit the butter and cream. Add parmesan cheese at the end for a strong flavour.

Pasta dishes:
Spag bol - make with quorn if you can get away with it (less fat)
Carbonara - made with bacon and low fat creme fraiche - add a bit of cheese at the end.
Tomato, olives, veggies, little olive oil and maybe some LF cheese at the end?

For snacks? Well, crispbreads or rice cakes spread with LF cheese, loads of fruit, potatoes sliced into wedges and cooked in the oven for healthy chips.

Hope this helps! Im off to find out if these ideas will be ok for SW so wish me luck!
