In Vodou an animal would not be left dead anywhere. Sacrificed animals are cooked and eaten. If you can not eat them they are properly disposed of. We have respect for the animals that gave their live as a sacrifice. Their ashe (energy) has blessed the work done.
I was probably someone playing a joke on you or they don't like you. But that has nothing to do with Vodou

My cat always leaves a dead mouse or bird on my living room floor, I have to clean it up (guts and all) therefore it is a curse! LOL

Never read much on voodoo, however in general witchcraft spells, it is considered a curse....depends also on what type of animal it was....could you add this, please....
