Mad Hatter Chili
2 pounds chuck roast (½" - ¾" cubes)
1 ½ pounds course ground chuck
6 slices thick-cut smoked bacon (coarsely chopped)
2 tablespoons cooking oil (optional)
2 large white onions (coarsely chopped)
2 cloves garlic (pressed or finely chopped)
4 large stalks celery (coarsely chopped)
5 dried habañero peppers
4 dried ancho peppers
2 cups water
6 fresh hot peppers (mixed variety, include 2 habañeros – de-seeded and coarsely chopped)
1 14oz. can crushed tomatoes
1 14oz. can petite diced tomatoes (drained)
2 tablespoons cumin
1 tablespoon oregano
½ teaspoon salt
Directions
Boil water. Place dried peppers in a bowl, add boiling water, and cover. Let sit about 10 minutes. Remove and de-seed peppers. Strain water to remove seeds.
Place water and seeded dried peppers in a pot over medium high heat, cook until half of the water is reduced, about 30 minutes.
Place fresh peppers in food processor along with reduced dried pepper mixture and pulse to make a sauce with a consistency a bit like ketchup. Add additional water if needed. This will result in about 2 cups of “chili sauce.”
Brown bacon, onions and garlic in large stew pot over high heat. Add cooking oil if needed. Once bacon is browned and onions “wet” add chuck roast and ground chuck and cook until browned, stirring occasionally. Drain.
Add chili sauce and celery to meat mixture. Stir well. Cook over medium-low heat for 1 hour.
Add crushed tomatoes, diced tomatoes, cumin, oregano and salt. Cook over medium-low heat for an additional 1 hour. Be careful not to cook off all the liquid.
Serve with your favorite toppings.

Here is an easy one and I actually won a cook off with it.
Brown 1 - 1 1/2 pounds of hamburger meat. Drain grease. In large pot mix: 1 large can of diced tomatoes
1 - 2 cans of rotel tomatoes
1 1/2 packages of chili seasoning
1 can of ranch style beans
Do not drain any of the canned items. Add in hamburger meat. Bring to a boil and simmer about 25 -30 mins. If you want make it a day ahead of time. When you reheat it, it will have thickened a little. If you want it more soupy add some water when initially cooking.
That's it. If you want more spicy add some jalapenos. We just add cheese and cornbread when serving. Enjoy

If you are pressed for time i would suggest getting a chili mix packet. My fav is French's brand (the mustard company) i add my beef, and 2 cans of diced tomatoes. i also add a big onion and green pepper, i don;t like beans, but you can add that too! if you want some spice add a jalepeno.
I think i may make some this weekend as well!

MARK’S CHILI CON CARNE
One pound ground beef
One tablespoon olive oil
One tablespoon chile oil
One large onion, chopped
4 fresh hot peppers, finely chopped
2 cloves of garlic, chopped
One 15 oz can Hunts tomato sauce
One tablespoon chili powder
Half teaspoon cayenne powder
A few dashes of hot pepper sauce
One teaspoon cumin
Half teaspoon achiote powder
Half teaspoon coriander
Half teaspoon of paprika
Quarter teaspoon oregano
Quarter teaspoon black pepper
Half teaspoon salt
In a large pot, sauté the ground beef until browned and then remove with a slotted spoon. Drain the fat if you wish. Add the oils and then sauté the onion and peppers until soft. Add the garlic and sauté one minute. Add all of the remaining ingredients and the meat. Bring to a boil and simmer for one hour, stirring frequently. Add more salt if necessary.

Wonderful Chilli:
3½ hours 20 min prep
12 servings
2 lbs lean ground beef
1 (29 ounce) can tomato sauce
1 (29 ounce) can kidney beans (with liquid)
1 (29 ounce) can pinto beans (with liquid)
1 cup diced onions (, 1 medium onion)
1/2 cup diced green chili peppers (, 2 chilies)
1/4 cup diced celery (, 1 stalk)
3 medium roma tomatoes, chopped
2 teaspoons cumin powder
3 tablespoons chili powder
1 1/2 teaspoons black pepper
2 teaspoons salt
2 cups water
1. Brown the ground beef in a skillet over medium heat; drain off the fat.
2. Crumble the cooked beef into small pieces.
3. In a large pot, combine the beef and all the remaining ingredients, and bring to a simmer over low heat.
4. Cook, stirring every 15 minutes, for 2 to 3 hours.
