There is dating, playing the field, keeping options open and then there is courting a woman.

Guys do you know what it is to court a woman ? If so, what would / do you do to honorably, respectfuly and valuingly, court a woman ?

Valuingly? That's the most awesome non-word ever.
In America, there really isn't courting anymore. There's dating, which can lead to a committed relationship (which you left out of your list of options) and a marriage usually evolves from there.
Courting in America existed before the Sexual Revolution of the 1960s and 1970s. The Sexual Revolution helped women gain their relationship and reproductive rights.
So courting is really for more patriarchal cultures, where women don't have as much say over their romantic and reproductive lives as modern American women do.
Being a modern American man who loves his modern American women, what with their romantic and reproductive rights and all, I really have no conception of courting and how it works.

Excuse me, courting and dating are the same thing. Whether some one wants to commit to just one person in dating or courting [which ever term you prefer] has no bearing.
