Well if ya take your cookies and put them in a sealed container or a jar and put 2 or 3 pieces of bread in the container then seal it and wait a day they will be as soft as can be! Works great for brown sugar too ;)

Put them in an airtight container with a slice of bread. After awhile, the bread will be totally dried out and the cookies will be super soft! If you leave it in overnight, your cookies might start to fall apart, so take the bread out after a couple hours max.

Try a damp paper towel and microwaving them, if bread is put into a container with cookies it will keep them soft!

Store them in a Tupperware or other soft plastic container, this will make them soft. If you want cookies to remain crisp, such as biscotti or pizzelli store them in a tin.
