Fish tastes delicious when microwaved.

I generally marinate my mackerel and coat it with a bit of oil and micro it on high 3 mts on each side and it tastes as good as fried.

Fillets of pomfrets need to be microwaved for 2 mts on each side in my oven.

I would suggest that you microwave it for a minute less than what you think should be the ideal time check for doneness and put it in again coz if fish is over cooked it becomes dry and very hard.

Fish is excellent in the microwave, it's one of the ways I cook fish most often. Most fish cookbooks will have a section on microwave cooking, or most microwave cookbooks will have a section on cooking fish............. there are also a lot of online sites where you can go to get recipes.
But, yes, fish is one of the BEST things to prepare in the micro, as it locks in the moisture and you don't have to worry about added fat and cholesterol from oils, like you do with frying.
Is there a particular type of fish that you are interested in?

Fish are naturally tender and contain little connective tissue. Unlike meat, they are best cooked quickly at a high temperature. Microwave cooking, then, is especially suited for fish and seafood. It enhances it's delicate flavor and gives a moist, light product while retaining valuable nutrients. Fish can be microwaved in several ways to produce a variety of dishes. Fillets and steaks can be steamed or poached for a light meal. Or they can be microwaved in a sauce for a rich, hearty meal or prepared in casseroles, soups and chowders. Whole fish are deliciously juicy when steamed in their own natural moisture.

It's excellent. I mix EVOO (or butter if I feel wicked) with fresh or dried herbs-basil, fennel and thyme all work well-and for a 4 oz fillet cook on high 2 minutes-my microwave is old,so you may want to adjust the time. Bon appetit.
