how to boil and make them tasty

500 gms rajma
2 large onions
6 garlic clovettes
A small piece ginger
1/2 tsp black peppercorns
1 stick cinnamon
4 cloves
4 dried red chillies
8-10 green chillies (the small green variety)
1 tsp cumin seeds
2 tomatoes, chopped
1 tsp lime juice, freshly squeezed
2 tbsp coriander leaves, chopped
1 bay leaf, cut into 2-3 large pieces
2 tbsp ghee or cooking oil

Blend together 1 onion, garlic, ginger, peppercorns, chillies, cloves, cumin and cinammon. Set aside.. Mince the remaining onion.. Heat the oil and add the bay leaf and minced onion and fry on high heat.. When the onion turns light brown, add the blended masala and continue to fry on high heat till oil starts leaving the side of the masala. This will take in the vicinity of 12-16 mins.. Now remove from heat, add the tomatoes, Boiled rajma and salt to taste. Add water as needed. Usually about 1 cup of water is enough for a good gravy. Bring it to a boil. Add the coriander leaves and lime juice. Mix well and heat for about 3-4 minutes.

Here's how I boil the rajma

Soak them overnight in hot water. Next morning drain the water and soak them again in hot water for 30/45 mts. Put them in the pressure cooker and add fresh hot water to it and let cook for 20 /30 mts.

The key ingredient in getting them to cook well is the hot water.

1 can rajmah* and half a cup of water (depending on how soupy you want this dish)
1 med onion
x thai chilies
2 cloves garlic
a thumb size piece of ginger
1 tomato
1 tsp salt
1 TBL whole cumin
1 tsp turmeric
1 tsp cayenne
dash of cinnamon
1 TBL garam masala
3 TBL chopped cilantro

Directions.
1) chop onions really fine
2) heat some oil (on med-high heat) and put the onions and cumin in the hot oil.
3) mince ginger and add to frying onion
4) mince garlic add to onions/ginger
5) after a few minutes add all dry powdery spices (except garam masala) to the frying onions/ginger/garlic
6) after you have fried the onions a lot, add have of the cilantro.
7) fry some more.
8) add tomatoes. Fry some more. At this point, the misture should be sort of a thick liquid (to give you an idea how small to chop the onions and how long to fry them.
9) add rajmah and some water (so that it is a thick soup).
10) simmer for about 10-15 mins.
11) add remaining cilantro and garam masala.
* although I have called for one can of rajmah, I highly recommend that you boil your own beans (in a pot or a pressure cooker, you can soak the beans overnight to make this easier). Doing it this way, you can use the broth produced when boiling the beans. I find this gives a much more full, less watered down flavour. It makes a big difference.

2 tomatoes chopped
2 onions
3 green chillies
2 flakes garlic
1" piece ginger
2 tbsp. beaten curds
1 tsp. cumin powder
1 tsp. garam masala
1/2 tsp. red chilli powder
1 tbsp. coriander leaves
1-2 tbsp. oil
Salt to taste.
Method:
Soak the red kidney bens for 2-3 hours. Boil the beans till soft and mash well. Keep aside. You can used canned beans drained and rinsed.
Grind ginger, garlic, green chillies and onions to a paste.
Heat oil in a pan, and fry the ground paste to a golden color. Add 1/2 cup water and cook till the mixture turns dry.
Add chopped tomatoes, curds and all the spices. Fry for 10 minutes, then add mashed kidney beans and 1 cup water.
Cook for 5-10 minutes. Remove from the heat and garnish with coriander leaves.
Serve with chappatis /pooris

Do not soak the beans as suggested by others. It will take longer to cook but at least you wont get the bean peels coming off. Other recipes are all good.

Whatever way you like.
Soak in cold water for overnight.
Cook it like chana.

leave it to germinate for a day so that it becomes soft and then use to make desired dish
