Kayle's Mexican-Style Chicken Stew
INGREDIENTS:
2 lbs boneless chicken breasts, skin removed, cut into 1-inch pieces
4 to 5 medium potatoes, peeled and cut into small cubes
1 (approx. 16 oz) jar mild salsa
1 (4 oz) can diced green chile peppers
1 (1 1/4 oz) envelope taco seasoning mix
1 (8 oz) can tomato sauce
PREPARATION:
Combine all ingredients in slow cooker. Cover and cook on low for 7 to 9 hours. Serve with warm flour tortillas.
Mexican Pork Chops
INGREDIENTS
1 tablespoon vegetable oil
4 boneless pork chops
2 (14.5 ounce) cans chopped stewed tomatoes, with juice
1 (8.75 ounce) can whole kernel corn, drained
1 (8 ounce) can red kidney beans, drained
1/2 cup uncooked long grain white rice
1 (4 ounce) can diced green chilies, drained
1/4 teaspoon salt
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
Heat the oil in a skillet over medium heat. Brown the pork chops about 5 minutes on each side. Remove chops from skillet and drain oil.
Mix the tomatoes, corn, kidney beans, rice, chilies, and salt into the skillet. Bring liquid to a boil. Cook and stir for 1 minute, until heated through. Transfer the tomato mixture to a baking dish. Arrange the browned pork chops over the mixture.
Bake covered 30 minutes in the preheated oven. Uncover, and continue baking 10 minutes, until rice is tender and pork has reached an internal temperature of 160 degrees F (70 degrees C).

I found this recipe about a week ago. The only things I did different were: (1) didn't put onions in; (2) we used the shredded cheeses and instead of just monterey jack cheese we used the taco blend.
Chicken Enchiladas
8 whole chicken breasts, cooked and cubed
2 white onions, diced
1 large container sour cream
1 small container sour cream
1 can cream of mushroom soup
1 can cream of chicken soup
1 lb. cheddar cheese, grated
1 lb. monterey jack cheese, grated
1 small can chopped mushrooms, or fresh
1 small can diced green chilies
1 large can sliced black olives
16 large flour tortillas
1. Combine the chicken, onions, 1/2 can of each soup, large sour cream, 3/4 of all cheese, green chilies, mushrooms and olives.
2. Spoon mixture onto tortillas and roll up. Place seam side down in oblong baking dish.
3. Mix all remaining ingredients; pour on top.
4. Bake at 350 degrees for 30 to 40 minutes, until heated through.
Serves 8.
Wrap extra enchiladas seperately and freeze. Make a new sauce for them when you next plan to serve them.

Ingredients:
1 1/2 pound of cubed meat.
1 16oz. jar Tejano Taco Mex
Quartered onions & tomatoes (2 each).
1 Serrano pepper, quartered
1 yellow bell pepper, julienne slices.
2 garlic cloves, crushed.
2 tablespoons oil.
Directions
Brown meat in hot oil and add garlic (5 minutes). Pour Tejano Taco Mex over the meat and simmer 15 minutes. Add all vegetables and cook for another 15 minutes. Garnish with cilantro.

Spicy Chicken Spaghetti
INGREDIENTS
1 (16 ounce) package uncooked spaghetti
1 cup Worcestershire sauce
1 cup ketchup
1 cup tomato sauce
1 cup chopped green bell pepper
1 cup chopped onion
1/2 cup brown sugar
1 teaspoon chili powder
1 whole cooked chicken, deboned and chopped
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Place spaghetti in the pot, cook 8 to 10 minutes, until al dente, and drain.
In a separate pot, mix the Worcestershire sauce, ketchup, tomato sauce, green bell pepper, onion, brown sugar, and chili powder. Bring to a boil. Mix in the chicken, reduce heat to low, and simmer 10 minutes, or until chicken is heated through. Mix in the cooked spaghetti, and serve warm.

What about pork chops, I have great recipes for them. What about making roast beef and the trimmings - like with lots of veges. I do have a suggestion, try Kraft recipes.com. and they will send you unlimited recipes every month and also lot of tips.
