Australia and New Zealand both actively seek qualified teachers (for many subjects) and will offer limited period working visas. Firstly, you will need to explore teacher registration with their professional bodies (an assessment of your qualifications, experience, a police check and perhaps a medical) and then you can start the visa application process. (Note that you will need teacher registration in the Australian state you wish to work in - there is no national system).

Good luck - I taught in New Zealand for two years and loved it!

NB
Be warned though, there is NO POINT in applying for jobs until you are on the teaching register! You will just be referred to the above process! Once you are registered, you will have free access to government recommended recruitment agencies and a listserv which list all teaching vacancies throughout NZ. Schools employ teachers directly, so there is little point applying to the Department of Education unless you are interested in curriculum development or policy making.

See the section on the 4 steps at:

Ni hao. I live in NZ and studied Putonghua (standard Chinese) with our Correspondence School which is in Wellington. That was in 1995. All their tutors came from Beijing. I don't know what the situation is now. The Correspondence School is a very good employer, if you can get a job with them. In addition, many high schools here teach Chinese. I don't know if any teach dialects; most students of Chinese here want to learn Beijing Chinese. Try the Correspondence School and then try the Dept. of Education.

Contact the embassy in those countries and see if there is a need. Otherwise that would be an awfully long trip for a job interview not even knowing if they needed someone to do it. I would also recommend researching (which I am sure you have already done but thought I would mention it unless you have not) their culture so you can make sure you don't break any major social laws without being aware of it and then wonder why everyone is looking at you so strangely. Good luck mate.

We speak English in Australia not Chinese, who wants to learn how to speak Chinese? If you want to speak Chinese go to China.
