Ingredients: Fresh large lime(seedless if possible),
fresh mint leaves,
gomme syrup(thick sugar syrup),
crushed ice, mortar n pestle or a wooden muddler(somethin to muddle),
n not forgetin rum(i prefer bacardi white).
Boston shaker or a container(somethin to shake),
a good quality rock glass(9oz-10oz) if possible for serving.
Club Soda(optional)........
First cut the lime into 1/2, then into 3-4 wedges, depending on size.Get rid of the core(the white stuff in every citrus fruit) n seeds.
Next muddle da lime n mint leaves(5-8 leaves/sprigs) in a boston shaker wit a muddler or da mortar n pestle.
Muddle gently, dont crush it. Da lime n mint should not look like a paste ......
Next add 3/4oz to 1oz of gomme syrup in to the mixture of mint leaves n lime then add the crushed ice enough to fill the serving glass n 2oz of rum......
Give it a good shake(wit a shaker/ somethin to shake)so the mint leaves, lime, sugar, rum n ice mixes well n gets chill as well.
Ready to serve everything in to da glass..... top up wit soda optional
Another variation will b muddle the mint leaves n lime, put it into da serving glass, add gomme syrup n crushed ice.Lastly top it wit rum n just add a stirer in to it... same goes here as well u may top it up with soda....
Da difference btween the 1st n da 2nd is da 1st is shaken n da second is build......
I have written a good quality rock glss is so dat u can muddle gently into the serving glass immediately n using a boston shaker u can shake right away,,,,, it will fit/cover into the lip/rim of the glass.... huhu.
Remove(give it a gentle tap) the the shaker, wipe the rock glass n serve....
No extra utensils n less things to wash n clear..........

3 tbsp fresh lime juice
1 1/2 oz light rum
club soda
In a tall thin glass, crush part of the mint with a fork to coat the inside. Add the sugar and lime juice and stir thoroughly. Top with ice. Add rum and mix. Top off with *chilled* club soda (or seltzer). Add a lemon slice and the remaining mint, and serve.

2-3 oz light rum (I like Bacardi)
juice of 1 lime (1 oz)
2 tsp cane or turbinado sugar
2-4 fresh mint sprigs
soda water
Lightly muddle the mint and sugar with a splash of soda water in a mixing glass until the sugar dissolves and you smell the mint. Squeeze the lime into the glass, add rum and shake with ice. Strain over cracked ice in a highball glass. Top with soda water, garnish with mint sprig and serve.

recipe: 2 oz of light rum
7 frsh mint leaves
1/2 a lime cut into 4 pieces
2 oz of simple sugar syrup
Soda water
ICE
Put the lime and mint into bottom of glass. Mash it together with a mixing stick getting a mushy bit of leaves and squeezed limes and lime juice in the bottom of the glass. Fill glass with ice. Add 2 oz of rum. Add 2 oz of simple sugar. Top with soda water. put a couple of fresh mint leaves in the top. add straw and serve.
