First u should smell ur fish. It should have little 2 no smell. That is the first indicator. Than look at the eyes they should be clear not cloudy. Salmon should be a bright Orange color with clear white fat marbling. After cooking the fish it should be slightly opaque from its original color. The fish should not be cooked more than a few minutes on either side if sauteing or pan-frying. Poaching should be the same. Start the poaching process just under boiling poin. Baking may take a little longer but start with a higher temp and moniter closley.

Wild salmon is supposed to be pinkish-orange. That's the color they pick up from eating shrimp.

Salmon grown on fish farms can be either pink or pale white. That's because salmon grown on fish farms are naturally pale white, but often times they add coloring to the processing to make it look like wild salmon.

That depends on the type of salmon that you've bought.

Atlantic salmon and pacific salmon don't look the same. Wild salmon will always look darker (and have more taste) than does farmed salmon. And some species of salmon are simply darker than are others.

Hold your horses everyone, only Salmon that's gone to sea is pinkish. Farm raised salmon are just like trout, whitish and when they go to process they add dye to make it look like "Wild" salmon, ask your Fish Monger. As to the question how do we know what it looks like without a description.

The color would be peach/orange. You can see the difference between the cooked and the uncooked part. Uncooked would also look jelly-like.

Pink unless it is the white type. I does not change color during cooking.
