My suggestion is took cook something latin or french.
The cuban dish ropa veija or the french dish beef daube.
Both start with chuck steak about 2 lbs
1 large onion, 3 carrots,2 banana peppers)
If you want a latin dish add cilantro, 2 table spoons of plain vineger and 2 of red wine vineger ,18-20 olives with pimento chopped, 1/4 cup of chicken broth, garlic4-6 cloves) (salt and pepper to taste) 8 oz can of tomato sauce
Cook slowly in a cast iron pot on low for 4-5 hours or us a slow cooker and cook for 9-10 hrs. You know that the meat is done is when you can just pull meat apart with a 2 forks.
Remove meat and shred and then add back to juices. At the final 5 minutes add more chopped cilantro with some a few more chopped olives. (capers are optional). Serve with brown or white rice according to preference with a tomato salad.
If wish a french slant, then marinate the meat in a cabernet or a shiraz(syrah) overnight.
Saute onions, carrots, celery, garlic5-6 minutes, add meat, then add 2 cups of wine, 1 table spoon of viniger, add fine herbs(thyme, bayleaves, rosemary, some salt and pepper)
Then cook the same way as above. Just before serving add chopped parsley and reseason with salt and pepper. You will find different versions of these recipes online as well. Serve with french bread and french green beans with olive oil and lemon

Good suggestions so far... if you're looking for something a bit different, I can highly recommend the recipe below. It looks more complicated than it is. The only thing I do differently is to cook the chicken far longer. In order to get them browned (I use a non-stick pan), you'll need to cook them for about 15-20 minutes before adding the apple juice -- at least that's been my experience.
Add a green vegetable, some brown rice, cranberry sauce and you'll have a very colorful meal to enjoy!
The source of the recipe is a book called CRAZY PLATES, written by two sisters. This and their other cook book (LOONEY SPOONS) are a riot to read, even if you never make a single one of their meals. The artwork is fun, the text is hysterical and the recipes are really not hard ... there are usually just a few ingredients that I've never worked with before.

Chicken Ritz Casserole
Ingredients:
5-6 chicken breasts, cooked
1 can cream of chicken soup
1 can cheddar broccoli soup
about 1/4 soup can of milk
1-1/2 c. sour cream
2 c. cooked minute rice (1 c. prior to cooking)
dash salt and pepper
30 to 40 Ritz crackers, crumbled
Butter
Cooking Instructions:
Cook chicken and remove chicken from bone and cut up. Place chicken in casserole dish. Mix together remaining ingredients. Pour mixed ingredients over chicken. Top with crushed Ritz crackers; dot with butter. Bake at 350F. for 45 mins.

For something really impressive that you can't mess up, I'd go with pasta, and I have two suggestions: Spinach Fettucine with Chicken Mustard Sauce or Farfalle Checca. Both are fabulous. If they want comfort food, go with the first. If they are more "refined," I'd go with the second one. Don't forget the garlic toast and a beautiful salad! Maybe a store bought or restaurant takeout tiramasu for dessert. And wine.

How about Chicken and dumplings. LOL like your nic there.. Spaghetti is always a good chose, a nice simple pasta dish with a garlic bread and salad is always easy and everyone enjoys Pasta..
