Fruit bat is a wonderful delicacy, and there are three ways to do them. If you have a deep fryer, you can simply drop them in the basket and cook at 350 degrees F until they float. You can get a round screen with a handle that goes over the basket to minimize spattering, and that helps keep the bat in at the beginning.
You can also roast or broil them. This is best done with a skewer inserted until it comes out near the head. You should truss the wings if doing them this way, or put a weight on the skewer to keep it in place on the pan. If you choose to not truss the wings, it works sort of like a convection oven. They're done when the skin is crispy and can be scraped off.
Finally, they can be boiled sausage-wise. This is the easiest way to season with herbs because you can ease the herbs in along with the fruit bat, head first into a condom before lowering into the pot. They can be held at a simmer for quite a long time, making them good treats for a drop-in party since they can be pulled from the pot as needed. Reserve the broth for soup stock.

If so, take a LARGE pot. Add lambs, sloths, carp, anchovies,orangutans, breakfast cereals and fruit bats. Toss in the Holy Hand Grenade of Atioch. Count to 5.....err 3. and bon appetite!

Why would you want to? I can't imagine there's much meat on them and I highly doubt they're safe to eat.
