I am wondering what kinds of salads are eaten in the different parts of the country. For example, did you used to have a favorite salad growing up that you can't find the "fixings" for after moving across the country? (Or the world!) Ever put together a salad and have a newbie to the area ask you what in the world you were doing?

Goldy's Special Salad
All the fresh ingredients make this salad a great side dish or a whole meal by itself! The black pepper brings out the flavor of the mangos.

10 oz fresh spinach - trimmed, washed and dried
1 mango - peeled, seeded and cubed
1 avocado - peeled, pitted and diced
1 tomato, cut into wedges
1/2 red onion, julienned
1/2 lb fresh mushrooms, sliced
2 Tbs extra virgin olive oil
1/2 cup white wine vinegar
1/2 tsp ground black pepper
1 pinch white sugar

1 In a large salad bowl, combine the spinach, mango, avocado, tomato, onion and mushrooms.
2 Prepare the dressing in a jar by combining the oil, vinegar, pepper and sugar. Seal, shake well, and pour over salad. Toss and serve.

Green Pea Salad is regional to the south. You make egg salad as you usually would with relish and then add a can of early green peas. It's delicious.
