Maple-Balsamic Glazed Salmon
Ingredients:
2 tablespoons extra-virgin olive oil
1/4 cup (60 milliliters) sugar-free pancake syrup
2 cloves garlic, crushed
1/2 teaspoon salt
2 tablespoons balsamic vinegar
1 pound (500 grams) salmon fillet
Preparation:
Mix together everything but the salmon and set aside half the mixture. Cut the salmon into 3 or 4 serving pieces.
If you didn't buy it in serving-sized pieces, lay them on a plate and brush both sides of each piece of salmon with half of the pancake-syrup mixture.
Grill the salmon over well-ashed coals, or over a gas grill set to medium-low, about 5 minutes per side or until done through.
Place on serving plates, drizzle with reserved baste and serve.

Dear future bride; I love salmon, particularly wild salmon. Farm raised, such as Norwegian or North Atlantic doesn't have the same full flavor as wild Pacific salmon. For a simple glaze, just sprinkle brown sugar on the salmon. Put the steaks on the skillet or grill and sprinkle brown sugar over one side. I've looked over the other recipes here and think most of them sound delicious. Remember, salmon has a delicate taste and the taste can be overwhelmed by whatever you add. Even brown sugar is a bit heavy. Just a touch of salt and lemon juice is great...if the salmon is really fresh. Onions, chopped very fine, possibly fried in butter, with a touch of garlic (if you like garlic) is also good. Sometimes the local fish market that sells the salmon can give you some recipes. Good luck...and good eating.

this is a very good recipe for glazed salmon fillet
INGREDIENTS
1/4 cup reduced-sodium soy sauce
2 tablespoons brown sugar
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon ground ginger
1/8 teaspoon sesame oil
1 (1 1/2 pound) salmon fillet
DIRECTIONS
In a bowl, combine the first five ingredients. If grilling the salmon, coat grill rack with nonstick cooking spray before starting the grill. Grill salmon, covered, over medium heat or broil 4-6 in. from the heat for 5-6 minutes on each side or until salmon flakes easily with a fork, basting frequently with glaze.

If the salmon you bought is wild (not wild caught or farm raised) the flavor of the salmon will be ruined by marinades or glazes.
Following is a sauce I put UNDER my wild salmon when I serve it:
1/2 cup of red wine
1/2 teaspoon of red wine vinegar
1/4 cup of shallots
1 stick of butter
Combine the first 3 ingredients in a sauce pan until the wine is reduced to 2 tablespoons.
Add the butter, 1 tablespoon at a time, constantly stirring.

1 whole side of salmon, or 4 (6-ounce) salmon fillets
1 tablespoon fine sea salt, preferably gray salt
1/2 teaspoon freshly ground black pepper
1/4 teaspoon dry mustard
1/2 cup honey
1/4 cup balsamic vinegar
Melted butter, for brushing salmon
2 untreated cedar planks, each about 5 by 12-inches, soaked in water to cover for at least 12 hours (available at hardware stores)
Extra-virgin olive oil, for oiling the planks
Preheat the broiler. Preheat the oven to 400 degrees F.
If using a side of salmon, cut about halfway through the flesh about every 5 to 6-inches so there are some spaces for the glazes to sink in. If using salmon fillets, slice about 8 to 10 sliced angles into flesh, to help flesh more completely soak in the glaze.
In a small bowl or cup, mix the salt, pepper, and dry mustard.
In a medium glass bowl, heat the honey in the microwave for 30 seconds to liquefy further. Remove from the microwave and mix in balsamic vinegar.
Brush the top of the salmon fillets (not the skin side) with the melted butter. Season the flesh side with the spice mixture. Brush with the honey-balsamic mixture, reserving some for later.
Put the soaked planks under the hot broiler, about 5 inches from the heat source, until the wood is browned on top, about 3 minutes. With tongs, carefully remove the planks from the oven.
Immediately brush the browned surface with olive oil, then lay the salmon fillets on the oiled surface, skin side down.
Put 2 cookie sheets in the oven below where the planks will go to catch any glazes or juices that run off. Return the planks to the broiler and cook the fish for 10 minutes. Baste with honey-balsamic and place in oven. Cook until it is done to your taste, about 10 to 15 more minutes, or 20 minutes total for medium.
Remove the fillets to a platter, or immediately serve directly from the planks.

Here are 3 glazes. Just remember they are to give you an idea of what to use. I usually don't have all ingredients on hand but a glaze is whatever you make it. Have fun!
Barbecue glaze:
1/2 small red onion, finely chopped
1 tablespoon extra-virgin olive oil
3 tablespoons red wine vinegar
1 cup dark amber maple syrup
1 tablespoon tomato paste
1 tablespoons Worcestershire sauce
1 teaspoon curry powder
1/8 teaspoon liquid smoke flavoring
1 teaspoon coarse black pepper
OR
Honey and Soy Glazed Salmon
1/4 cup honey
1/4 cup soy sauce
3 tablespoons fresh lime juice
2 tablespoons water
1 tablespoon plus 1 teaspoon Dijon mustard
1 to 2 tablespoons vegetable oil
4 (6-ounce) pieces salmon fillet, skin removed
Black sesame seeds, for garnish
In a small bowl, whisk together honey, soy sauce, lime juice, water, and mustard. In a small non-stick skillet, heat oil over moderately high heat until hot but not smoking and cook salmon 2 to 3 minutes on each side, or until golden and just cooked through. Transfer salmon to 4 plates. Add honey mixture to skillet and simmer, stirring occasionally, until it reaches a glaze-like consistency. Pour the glaze over salmon and sprinkle with black sesame seeds.
OR
Citrus basalmic glazed salmon
8 salmon fillets, 3/4-inch thick, about 1 1/2 pounds total
Salt and pepper
3 tablespoons olive oil
3 tablespoons balsamic vinegar
1 1/2 tablespoons cornstarch
1 tablespoon orange juice
1 tablespoon brown sugar
1 (14-ounce) can seasoned chicken broth
Preheat oven to 350 degrees F.
Rub salmon with salt and pepper. Place salmon in 2-quart shallow baking dish. Drizzle with olive oil. Bake for 15 minutes or until fish flakes easily with fork. Whisk balsamic vinegar, cornstarch, orange juice and brown sugar in medium saucepan. Add chicken broth and heat to a boil. Reduce heat to a simmer, stirring until the mixture thickens. Arrange salmon on serving platter and serve with sauce. Serve over hot white rice, if desired.

my husband made me a ginger glazed salmon for new years eve that was delicious
dijon mustard
fresh ginger
brown sugar
season fish with salt and pepper then brush with glaze made with above ingreidientsand broil for 8-15 minutes depending on wt of fish

Make Tartar Sauce.
I use half cup Miracle Whip Salad Dressing
one teaspoon LEMON JUICE
one tablespoon sweet Pickle relish
a pinch of granulated garlic
Spread over baked or steamed or fried salmon.
Easy and tastes great.
