Snow peas, bamboo, cauliflower, sliced carrot though it can sweeten the dish, water chestnut, baby corn...
I like to wilt some spinich in at the last minute.
Cilantro, cut it up then run it through a mini chopper, the stems have more flavor/scent then the leaves and this helps make them palatable.

i would ditch the orange olive oil and go for a lemon and garlic one instead
