The text and more information about the Americans with Disabilities Act is at the link posted below. I am not sure what you mean by "covered."

The ADA states that employers need to make reasonable accomodations for Americans with disabilities. The severity of your celiac disease would determine whether or not it counts as a disability.

If you are asking about Social Security Disability, that is a horse of a different color.
