Well, you can eat, eat, eat... but this would not make you gain weight in a healthy way. It would just add fat.

You would gain weight the same way you lose it: weight training. In this way, you'll build muscle mass instead of fat. If you eat to gain weight, you can't control where exactly your body will place the fat. You may have a big gut and thin legs or vice versa. By weight training, YOU control where you will gain the muscle and keep yourself proportioned well.

You should probably also eat some high calorie foods, but healthy ones such as potatoes and pasta with a good portion of protein on the side (fish, beef, etc).
There aren't many people with your problem, so visiting your doctor and possibly a nutrionist would be best for the diet portion.

For the weight training portion, either find a personal trainer or pick up one of the magazines directed at women on this topic (HERS for example).

i know a very good way to expand your stomach. drink 2 liters of water as fast as you can. it works, try not to pee while you are drinking the water. the next day it will make you feel more hungry than before. and then you will eat more. gaining weight isnt always healthy
