"white blood cells" (also known as leukocytes) are the cells in your blood responsible for immunity (your body's ability to fight off disease. In very broad, oversimplified terms, blood has three cellular components, red blood cells, which transport oxygen, platelets, which are important in blood's ability to clot, and white blood cells (which are actually composed of many types of cells) which are responsible for recognizing and destroying foreign bodies without harming the person himself.
You can find information about them on any medical website, but you're probably best using a more general reference, like wikipedia, or even an online encyclopedia if what you want is a simple overview rather than more detailed and complex medical information.
