Believe it or not, it all goes back to the Norman conquest of England. For sometime after, all the nobility spoke french and English was for the commoner. So cooking became more refined and it seemed better to eat "Boef" or "porc" than cow or pig. As to why not chicken? That I don't know. Perhaps chicken wasn't special enough to rename.
