What can we put in the soup to give it some flavor, but also does not take away from the tortellini?

thyme, parsley, black pepper, and either kosher or sea salt

Cook the soup with a pinch of saffron. Add a small amount of chopped tomato and slivered leeks at the end. Shave a little parmesan on just before serving and garnish with a little chopped parsley.

According to my Betty Crocker cookbook, herbs and spices for chicken soup are: Marjoram and Sage.
For bouillon (broth): Oregano

I like dill and olive oil, but you can try some rosemary instead of dill, or just use Italian Seasonings, and a bit of olive oil. Sprinkle or grate some Romano or Parmesan cheese on top. You can also cut up some peppers.

add spinach, tomatoes(or tomato sauce) onions ,garlic,or pesto. any and all of these will enhance the flavor but you'll be able to taste each one separately. top off your individual bowls of soup with Parmesan cheese.
