what would happen if you bred a flame point siamese to a chocolate point siamese?

Well, I would imagine you would end up with some flames, and some chocolates. It could produce a Torti though. Hmmm...I don't know! :) Good luck!

It's genetics. Go ask a real, experienced siamese breeder who knows this kind of thing.

And don't breed. It adds to pet overpopulations. Purebreds and muts alike are euthanized daily simply because we don't have enough homes and resources for them. Breeding is selfish.
