Because the color in the liquid is extracted through digestion and either taken up in the intestines or filtered through the liver and/or kidneys. Also, lots of chemical reactions go on inside the body that could break down the chemicals that cause one color and turn them into chemicals that have a different or even no color.

The kidneys filter the color out although if you take vitamin supplements they make your urine brite yellow and it has a vitamin smell.
