I'm making one of my family's favorites tonight.

BBQ Boneless, skinless chicken thighs(can use any kind of boneless, skinless pieces of chicken)

Season thighs with whatever you like(salt, pepper, garlic salt or powder, onion salt or powder)
Pan fry both sides in about a few tablespoons of EVOO(extra virgin olive oil)
You do not have to get them completely done. take them out of skillet and place them on platter in oven to rest.
Put 1-2 minced cloves garlic and 1/2 cup onion in skillet you just took chicken from, add a little more oil if necessary. Saute a few minutes.
Add 1 cup chicken stock or broth(you can use water if you don't have stock or broth) to pan and scrape bits off bottom for flavor.
Add 1/2 to 1 cup of your favorite BBQ sauce(we love the Jack Daniels brand). You want it to be fairly thin.
Return chicken to pan and cover with foil or lid and simmer for approx. 20-30 mins.(however long it takes me to finish the side dishes) the meat finishes cooking and the sauce thickens.
The meats so tender you can cut it with a fork.
This is excellent with mashed potatoes & corn or green beans.
The sauce is so yummy over the mashed potatoes since it is thin and not too overpowering. My hubby and kids LOVE it!

Good luck and enjoy whatever you decide to have!

might not be the easiest but...

This is a delicious and easy one-dish dinner with a Greek flair. It's also well-balanced and light - and everyone loves it. What more could you want?

INGREDIENTS
1/2 pound dried elbow macaroni
1 pound lean ground beef
2 cloves garlic, pressed or minced
2 medium carrots, quartered lengthwise and sliced
1 large zucchini, quartered lengthwise and sliced
1 1/2 tablespoons dried oregano leaves
salt and pepper
1 (10.75 ounce) can condensed tomato soup, plus
1 (10.75 ounce) can water
crumbled feta cheese (optional)

DIRECTIONS
Bring a large pot of lightly salted water to a boil. Cook elbow macaroni for 8 to 10 minutes or until al dente; drain, and set aside.
Brown ground beef with garlic in a large skillet over medium heat. Strain off fat, if necessary. When meat is lightly browned, add carrots and cook until tender, about 5 minutes. Stir in zucchini and oregano, and continue cooking another 5 minutes. Season to taste with salt and pepper.
When vegetables are tender, stir in tomato soup, water, and prepared elbow macaroni, and cook for another 5 to 10 minutes. Serve with crumbled feta cheese on top, if desired.

I would make him beer brauts, with onions, just brown your braut, with some onion add a bottle of beer and cook until done. Or make hamburgers with all the fixins and fries.

We're having leftover homemade chili, homemade cornbread, and salad.

I wish my husband like different shapes of pasta, like shells. He's weird, he only eats spaghetti. (I still love 'im though!)
