Thai Green veggie curry. Sainsburys green curry paste...peppers...potatoes...cauliflower...and maybe some chick peas...onions.
Lightly fry a sliced onion to soften.
Sliced peppers for a couple of minutes.
add some diced potatoes and toss in the oil with onions.
Depending on how spicy you want it...green curry paste.
Fry it for 1 minute to release the flavours.
Add a tin of coconut milk.
Simmer over a low heat for 10 mins.
Add Cauliflower florets and chick peas another 10 mins.
you can add some frozen peas and spinach near the end.
serve with plain boiled rice..enjoy!!!

Make an omellette. Peas, eggs,celery.onions. Par boil the celery & onions and allow to cool. Use frozen peas and immerse them in boiling water for 1 mn. Beat 4 or 5 eggs in a bowl. Drain the veg. Mix together in bowl. Add a decent knob of butter to frying pan & when sizzling add the mix. Cook until solidified and finish off by browning under a grill. Toss on to plate without breaking it up.

Vegetarian stir-fry is absolutely yum, and really easy to make.

Or you can try some steamed vegetables, really nice with a bit of spicy dressing

Cook a roast dinner without the joint. Watch the gravy you use though.

first, you should have plenty of vegetable stock with you. then, if you want to feed some vegetarians, start with some simple salads and assortments. tomatoes, carrots, cabbage, beetroot and potatoes are basic. make something out of them and iam sure they'll enjoy. look for recipes online or magaines and try them out.

Try falafel and vegetable spring rolls ! ( I know that I would eat it and I am vegetarian!) ;)
