When cooking pasta, one should always try a piece every once in while to judge the doneness. Pasta should feel firm on the tooth (hence, 'al dente'). Also, remove your pasta about 1-2 minutes before being cooked and resume the the cooking of the pasta in the sauce you have made for it. This will ensure perfectly cooked pasta by the time it has gotten to your mouth.

Pasta is overcooked when its mushy and limp to soggy, almost bloated. Most of the starch has cooked out and the pasta has lost its structure and texture. Pasta is cooked just right when the center is just a tiny bit opaque when you break it open.

The fresher and thinner the pasta, the less time it takes to cook.

I love carbs so i no this! Pasta iz overcooked when braking apart,way to tender or just plain burnt!

u know when pasta is cooked by throwing it at a wall with a little bit of force. If it doesnt stick, its not ready. When it partially sticks, its al dente, which means firm to the tooth and that is when it is considered ready. if it sticks completely, then its overcooked.

i know it sounds crazy but they teach u this at culinary schools and it works for me!!

when it gets sticky or mushy, you should only cook the pasta in boiling water and only for 5min. at the most I use angel hair pasta and I never leave the stove while it is cooking that's how fast it cooks up.
