A working one. Honestly.
The camera itself doesn't matter when it comes down to it. It has more to do with other factors, like the rapport between photographer and model, how experienced each of them is at what they do, what kind of lighting is involved, the background (cluttered or simple, for example) and the like. A good photographer can take photos with a $3.99 disposable camera that will be tremendously better than those of a poor or unexperienced photographer will take with the most expensive Hasselblad digital camera out there.
Incidentally, the Nikon/Canon debate is much like the PC/Mac debate: brand loyalty. I personally prefer Nikon (and I do work as a fine art nude photographer), but I know many nude photographers who use Canon. What it boils down to is which one you "click" with more. If you really like the way the Canon feels when you use it, then you're going to enjoy using it more. That translates to better pictures.

Canon EOS SLR. You need a SLR for sure so you can use "filters", etc.
