Cut two slices of bread, preferably of even thickness (the skill of using a bread knife is becoming a lost art), spread the slices with butter (not straight from the fridge) or low fat, cholesterol zapping spread. Hard cheese, Cheddar, Leicester, Gruyère etc. can be grated, crumbly cheeses such as Lancashire, Stilton can be crumbled, soft cheeses such as Brie, Camembert can be spread. Note that few cheeses can be sliced successfully, try Edam, Gouda or Jarlsberg. Place the prepared cheese on one slice of bread. You can then add ingredients of you choice e.g. Branston pickle with Cheddar, sliced pickled gherkin with Edam, sliced apple or pear with Stilton. Soft cheeses are best left alone.
Slap on the second slice of bread.
Alternatively you could use sliced bread, pre-sliced cheese and eat it as it is.

For a cold cheese sandwich I prefer to use american cheese singles slices with some Miracle Whip on white bread. For a grilled cheese sandwich I like a few slices of Velveeta on Wonder. Slather both sides of the bread with butter and grill on medium. I like to put a lid over the skillet to help the cheese melt.

Heat a frying pan up on med. heat. Place one tablespoon of butter in the pan and let it melt to cover the pan. Place one slice of bread over the bubbling butter. Place three slices of cheese over the bread making sure that there is no cheese hanging over the edges. Place another piece of bread on top and wait for the bottom piece of bread to toast to a golden brown. Flip the sandwich and toast the other side. By this point the cheese should be completely melted. Enjoy with some tomato soup.

GRILLED CHEESE SANDWICH:
A perennial favorite: soft melted cheese and pressed, buttery toast.
2 slices Cheddar, American, or Swiss cheese
2 slices white bread
2 tablespoons butter
Put the cheese between the slices of bread. Heat 1 tablespoon of the butter in a skillet or grill and when melted add the sandwich. Gently press down with a spatula once or twice during the grilling. When one side is golden, add the remaining tablespoon of butter, turn the sandwich over, and brown.
Grilled Cheese with Bacon. Fry 3 slices bacon until cooked but not crisp. Pat dry of excess fat, add on top of the cheese, and grill as directed.
Grilled Cheese with Ham. Put 2 thin slices ham on the cheese and grill as directed. Serve with sweet pickle.
Onion-Cheese Sandwich. Follow the recipe for Grilled Cheese Sandwich, but lightly coat 1 slice of bread with Dijon mustard. Sauté 3 to 4 slices onion in butter and put on top of the cheese. Cover and grill.
Tomato-Cheese Sandwich. Follow the recipe for Grilled Cheese Sandwich, but add two thin slices tomato to the sandwich before grilling.
1 Sandwich.

Why would you need a recipe? Simple, bung some saladdy stuff on the bread, put some cheese on top. Put the top slice of bread on - Bob's your uncle!

Buy a good mature cheddar cheese , Davidstow is good one it is made in north Cornwall. now you have brought it lets begin, grate the cheese then put a little bit of chopped red onion, lettuce and vine tomatoes , on brown bread or crusty bread injoy mmmmmmmmmmmmm

If you have one of those Sandwich makers, or Grills, then place all your fillings you like into the bread, cover with layers of delicious cheese, the stronger the better, and place on top the other slice of bread., and place into grills or makers, and cook. Comes out like sealed little packages all melted and gooey inside, but be careful they are very hot. splashes of favourite sauce,. \magic.
