Incents are long sticks that u light and blow out the flame...they smolder and the smoke gives off a pleasant scent...can also be small cones instead of long stickes.
Potpourri is a mixture of dried flowers. Usually you put in small potpourri pot with water and the heating causes the natural scents to fill the room.

Incense are sticks of cent, you light them and they give off a smoke which settles in and on everything. Smoke gets into everything as one who lives with or is a smoker knows.
Potpourri is dried pieces of whatever. Could be apple, rose petals, peaches even dried bark from a Christmas tree (by the way this makes the house smell all over as a Christmas tree would and is basically free for anyone who has a Christmas tree). This I feel is not the best way to go for it is just a temporary smell, not like smoke that gets into and on everything.
It just matters which one you like to do. Hope this helps..

Incese have different forms and shapes, can be stick or small square. Made from plants, and oil. Indians burn Incense, to smell them inorder to relax their mind while they doing Yoga. Chinese monks burn them to empty their mind while reading bible. It also helps get rid of some smells in your house. Potpurri are dried flowers. you can burn them like inceses too.
For decoration with Potpurri. Personally I don't like them, since they collecting dusts. I perfer to get freash flowers from garden or store ( in winter)
