For English try: Sadie, Sal, Sally (or Salli/Sallie)
From other European languages (many using affectionate or dimunitive endings common to a particular language):
Sari, Sarit, Sarita/Zarita, Sarika, Tzeitel, Sassa
For more on these names, and a few other "equivalents" from other languages (though NOT directly related to the Hebrew name "Sara(h)"), see:
http://www.behindthename.com/php/extra.php?extra=r&terms=sarah
If you want to be creative, you could play with combining the name with other dimunitive endings characteristic of various languages. See:

You could go with nicknames that would work out in other languages. For example, "Sarita" would be a common nickname for Sara in Spanish.

I have a friend that's called Sara and we call her Sary which is the diminutive (other than Sarita) in Spanish.

Sally, Sal are the usual ones.
I'd call you "Princess", which is what the name means!
