If it's already thawed, then 3 days max. I always pop mine in the freezer the day I buy them. So handy for those lazy days when I don't want to cook and can just toss the whole frozen ham hock in the crockpot with the makings for soup. It works the same!

I don't know about bacterial growth, decay, etc. but I know that I've kept many a ham bone in the fridge for a week after a big holiday dinner and then have made delicious soup and nobody died or got sick from eating it.

But....as everyone else notes, toss it in the freezer and then you can do it when you like and not feel rushed.

Also, sometimes I'll make the stock then freeze that. Then I can add the peas and veggies anytime later.
