I don't know about bacterial growth, decay, etc. but I know that I've kept many a ham bone in the fridge for a week after a big holiday dinner and then have made delicious soup and nobody died or got sick from eating it.
But....as everyone else notes, toss it in the freezer and then you can do it when you like and not feel rushed.
Also, sometimes I'll make the stock then freeze that. Then I can add the peas and veggies anytime later.
