I love scrambled, but when my husband and I visited London and Dublin this year, we learned that there are many ways of cooking scrambled eggs!

Here in the states, I guess you would say that most of the places that serve scrambled eggs serve them "hard scrambled"-- completely cooked through and very solid.

When we had scrambled eggs in the breakfast buffet in the UK, boy were we shocked! My first impulse upon looking at the scrambled eggs offered there was to think "My gosh, why don't they COOK them?!?" The eggs were very soft scrambled and had a lot of liquid still. Oh my were they ever runny!

Observation of the cooking methods leads me to conclude that the people in the UK scramble eggs at a much lower temperature than we do here in the states, and prefer a runnier, softer scramble than we here in the states do. FWIW, during our stay in London and Dublin, I found myself prefering fried eggs to the runny, liquidy scrambled we encountered!

Get yourself an egg coddler. Any good kitchen supply store will have one - cheap. Bring a small pot of water to the boil. Lightly butter the inside of the coddler. Without breaking the yolk, drop the egg inside and top with a tiny piece of butter, S&P to season and 1 teaspoon of salsa. Screw on lid of coddler tight and place in water. With Tongs remove from water after eight minutes. Unscrew top, remove egg and enjoy!!!

I like them like this; shred 2 slices of bread and break the eggs and scrape the whites onto it. Stir about and then salt and pepper then sit back and enjoy. My mom made eggs like this when we got sick.

Omelettes ... using butter in the pan which I let brown to give it a nice flavor .... sometimes the omelettes are plain, sometimes filled with herbs or cheese...nice with toast and some hot tea for breakfast or a quick summertime supper.
