I agree the bible is above the human races ability to understand it. I also feel humans are actually regressing because they don't seem to be nearly as smart as they once were.

If you erase from your mind all the junk man has told you and all the traditions of churches, and church rules, etc etc - wipe your mind clean of all of it, and then slowly and carefully read the Bible, (and there are great tools to do it with) then you can understand the Bible. There are 7 and 8 year old children who understand the Book of Revelation, even though I've heard pastors on Tv say that we aren't to understand that Book -
They call the beast of Rev. "unknown, and mystical to us".
Its not mystical or unknown at all. There are symbols that are there to help you to understand, and there are Hebrew and Greek idioms (sayings) in there that you can get a Companion Bible and know exactly what they are and what they mean. There is a Strongs Concordance, which gives you every single word in the Bible and then translates its actual meaning as written in the manuscripts. It includes the Hebrew, Greek and Chaldee dictionaries. If you really want to study the Bible, you can with understanding.
But your question states what if Christ never comes and then people come back to live for eternity on the earth and then we get global warming, etc.. that doesn't make sense.
If Christ never comes back, probably man won't come back to live on earth for an eternity.

The London Baptist Confession of 1689 says something related to this question that I think is helpful:
"All things in Scripture are not alike plain in themselves, not alike clear unto all; yet those things which are necessary to be known, believed, and observed for salvation, are so clearly propounded, and opened in some place of Scripture or other, that not only the learned, but the unlearned, in a due use of the ordinary means, may attain unto a sufficient understanding of them."
So, while the Bible does have things that are difficult to understand at first glance, not everything in the Bible is like that. What one needs to know about salvation can be understood even by a child. And we must not forget that it's not an exercise in intellect alone that gives one the knowledge necessary to be saved (though intellect plays a part). It takes the illumination of the Holy Spirit to give one a saving understanding regarding Scripture.
And while it's true that many people twist the Bible any which way they please, I wouldn't fault the Bible for that. By following basic rules of grammar, one can know objectively what the Bible says.

I don't have my Bible handy, but I believe there is a verse that essentially says "The Word is written in my heart". Basically, you can read the Bible in your own language and interpret it the way you feel it should be interpretted, and the Holy Spirit is supposed to guide you in this, and it can be meaningful and correct for you, and another person can read the same thing and have it mean something different to them.
Also, that whole thing about Jesus coming back to earth and bringing all the people from heaven, I don't take that literally, I think that could really happen anywhere and it would not be affected by global warming on odd weather, I think it would be just as Heaven is described.

There are so many various interpretations of the bible (and so many sects based on those interpretations) not because the bible is "above everyone's reading level," but because the bible has many errors, contradicts itself in thousands of places, and is incomplete. It's also unreliable, given the nature of its assembly from hundreds of books by dozens of authors over a long time period, and being assembled by "committee" in the 4th century CE.
Your statement above starts with an incorrect assumption (that the bible is somehow "true" and "above" people's ability to understand), and then wanders around looking for ideas to back up your incorrect assumption. You would be well-served by some education in both history and logic or debate that would help you make critical decisions better.

The simple, literal words of the Bible usually work best. Don't try to read in too much.
I understand what you're driving at, but it's not impossible to get a basic understanding of it, and it will work.
You don't want to believe any of it, so none of it seems any good to you. The Bible doesn't answer every question. It's really not a science book.
People who try to make it one are not using their God given intelligence.

God being god will make sure that the Sun does not explode as you put it. He will make sure that you develop brains that will fully understand everything in the bible. He has the power to change things. He will stop global warming. God will make sure that everyone is a Christian!!! On second thought, he could make sure that everyone is a Muslim!!! or a Hindu, or a pagan.... I'm confusing myself here. All this is beyond my level.
