At point during dating do guys usually start writing Take Care at the end of emails or leaving messages ending with this word.

Well,''Take Care'' has nothin to do with stages of dating.Its a common way of greeting people who could be anyone closer or farther.
Yes, its mostly used at the end of a convo or mails.

say it whenever you feel it's right to say, when your comfortable with it, it's just telling someone to take care of theirselves, I write it to people I don't even know
