I got a bottle of Moet What Star as an X-mas gift from a friend. I chilled it in anticipation of NYE. 2 days ago on the big night the same friend brought over a bottle of Dom, thereby eliminating the need to open the bottle of Moet in the fridge. Since NYE is over I don't see any reason to open the Moet at least until Valentines day, but its taking up room in my fridge!

Not being a big champagne connoisseur my question is THIS: The bottle was room temp when I got it, now its been chilled. If I take it out of the fridge now and allow it to go back to room temp, will it go "bad" ? I am in Massachusetts, and this year its been warm, days hovering around 50 degrees, evenings being very cool... but I could keep the bottle in the garage which is cooler than house temp but warmer than fridge. Or should I just learn to live with less fridge space, or better yet find an excuse for hubby and me to drink the bottle before Feb 14? Thanks in advance for your help!

The bottle will not break due to weather changes, but wine is very sensitive to sudden changes in temperature. Your best bet to keep the wine in top condition is to remove it from the fridge and move it to the coldest room in your house (on ground floor or basement but not in the kitchen) or, as you suggested, the garage. While the ambient temperature in the garage is unlikely to remain constant, you can at least ensure that it does not vary greatly.

For insulation, wrap the bottle in bubblewrap, a blanket or a piece of old carpet, this will not warm the wine as the insulation will prevent warmth from reaching the bottle as fast and thus further slow any temperature variation. Furthermore, the covering will prevent sunlight or artificial light from affecting your Champagne.

Contrary to popular belief, sparkling wines should be stored upright, if the cork is allowed to get too moist, the pressure in the bottle can compress it and compromise the seal.

The Champagne will be fine if you let it warm up to room temp. If you want to keep a bottle of wine a long time you want to keep it cool (cellar temp) but just as important or more is avoiding rapid temperature changes and high temps. You can cook wine if it gets to warm and a lot of rapid changes can make it tired. Find a nice dark spot to keep it outside of the the refrigerator probably not the garage if it could freeze there ( a really bad thing) put it back in the frig a couple of days early and enjoy, it is a great bottle of wine.

I think if you take the bottle out of the frig and store it in a cool place, it will be fine. Since the bottle is sealed tightly and has probably been in and out of rooms of varying temperatures before you bought it, the champagne should be fine. My husband and I have done this. The champagne is fine.

However, if you can do it, just leave it in the frig until you need it next time. You don't need to wait for a special occasion to enjoy champagne or sparkling wine.

I don't think champagne will skunk, but it "might." If you put it in the garage, and there's a super-cold snap, the bottle might shatter. if you leave it in the fridge for 43 days, that will be fine, but you'll have less usable space.

Maybe you should invent a holiday. Might I suggest "Romantic Wednesday." Pop that cork tomorrow night, and celebrate this new annual event. Be sure to stop and get a greeting card to commemorate the occasion.
