I'm an anesthesiologist, so I know a lot of surgeons but was too smart to become one :)
Surgeons may do any or all of these things on any given day:
See patients in the office
See patients in the hospital
Perform operations
Sign charts
Be called to the ER to evaluate patients there
Talk to family members about a patient
Review lab results
Look at x-rays, CT scans, etc.
They're a busy lot.

See pangolin's answer. Also consider that surgeon in large medical centers also do medical research, and may have laboratories, compete for grant support, write scholarly papers, and present their findings at professional meetings as well.
