Sandwiches i.e. ham & cheese, tuna/chicken salad, chicken or turkey breast, lettuce & tomatoes. Have a little side of cold potato or mac salad. Keep lots of fresh fruit around to go with - apples, bananas, oranges, raisins, grapes, yogurt or little pudding cups, fruit salad or a few chips. Kid ideas - mac n cheese, sloppy joes, kabobs (fruit w a yogurt dipping sauce or chicken nuggets). If you make meatloaf or meatballs the night before, make a meatloaf or meatball sanwich. Cold pasta salads are healthy, and you can add in any veggies, cherry tomatoes, and dressing (i.e. Italian etc.). Make the sandwiches interesting - roll em up in a flour tortilla or use a star shaped cookie cutter for the bread. Or little min pizzas on a flour tortilla - lay out the toppings & let the kids have fun making their own. Eggs/frittatas are easy - add in mushrooms, onions, shredded cheese.

The soup and sandwhich lunch is always quick and easy, and it doesn't have to be boring. You can jazz it up by cutting out the bread with cookie cutter shapes, by sprinkling shredded cheese or giving a dollop of sour cream to the soup, by adding a little crunch with a few peanut butter covered celery spears. The wraps are fun. You can also do things like spread a slice of lunchmeat ham with Philly cream, put a sweet pickle in the middle, roll it up and slice it into coins. Great snack with soup. Things like that are things that the kids can do, hands on, to help prepare their own lunch. It's almost fun like a craft, and then they get to eat it.

If you prefer cooking in the evening, I suggest that from now on, whenever you make something that is remotely freeze-able you double whatever you're doing and heat that up at lunchtime. Mashed potatoes, chili, most roasts you can freeze right in the gravy, any sort of casserole, etc. Add some noodles or instant rice, cut fruit and there you have it, instant home cooked lunch!

Cheesy Meatball Subs
Prep Time: 5 min
Total Time: 15 min
Makes: 4 servings, 1 sandwich each (you could double this?)
1 cup spaghetti sauce
1/2 cup water
2 Tbsp. KRAFT 100% Grated Parmesan Cheese
12 oz. (3/4 of 1-lb. pkg.) meatballs
4 crusty sandwich buns, split
3/4 cup KRAFT Shredded Mozzarella Cheese
COMBINE spaghetti sauce, water and Parmesan cheese in large skillet. Add meatballs; stir gently to evenly coat. Bring to boil on medium-high heat.
REDUCE heat to medium; simmer 8 min. or until meatballs are heated through, stirring occasionally.
SPOON into buns; sprinkle with mozzarella cheese.

SPREAD cut sides of bread generously with mayo.
PLACE lettuce, Singles, ham, turkey, bacon and tomato on bottom half of bread loaf; cover with top half of loaf.
CUT crosswise into 10 slices to serve.

I just did 10 days in a row of exactly the same. I made grilled cheese and chicken soup one day. Grilled some burgers another day. Made pulled pork sandwiches for New Years day for me and some buddies to watch the football games, kids got that. Burger King'd it one day. Left over Lasagna with buttered Italian bread. Grilled a bunch of chicken breast that was marinated in Italian dressing overnight. Made chicken ceaser for one kid and chicken with ranch for the other over salad greens. Chicken BLT sandwiches with melted swiss. Got a pizza one day and did leftover pizza another. Finally I really cheated and made PBJ sandwiches with soup.
Plus dinner every night...a lot of cooking. I'm going to Disney next year and eating every meal out.

Spaghetti and meatballs!!! While your cooking the pasta, heat some frozen meatballs in the microwave for one minute. When they're done, place them in a small pot containing some Ragu pasta sauce.
To make it extra nice, throw some mozzarella cheese over the meal once its been served. Its a snap and kids love it!!!

Here is something delicious and easy:
BLT(bacon, lettuce, and tomatoe sandwich).Just toast the bread for however many you are feeding, cut up a tomatoe,, and finely shred some lettuce, then slice some bacon and fry it or either cook in the microwave(make sure you place the bacon on a napkin if you are cooking it in the microwave). Spread mayo on the toasted bread, and place tomatoe, lettuce, and bacon on bread. I prefer to cut my sandwich in half=) YUMMY!!

I'm praying for school to start again, I'm having the same prob., i got a bunch of lunchables and frozen pizza which i serve with a salad or veg..easy quick ....even canned spagettio's with Texas toast...(prob. not the most healthy thing)
