Tofu This versatile food is remarkably nutritious, supplying complete protein and important minerals.
Choose tofu according to how you plan to use it. Delicate "silken" tofu can be simmered briefly, but it works best when pureed, in a shake, sauce, or dip. Regular and extra-firm tofu can be sliced, cubed, or crumbled.

I think that tofu is delicious. I like to press it between 2 plates for 10-20 minutes (weight the top plate down with a can of tomatoes), then I cut the block into 1/2-1" slices and marinate for a few moments in tamari and a dash of maple syrup and some garlic and then bake slowly (375ish) until it dries out a bit and becomes firm. I add the end product to sandwiches and stir fries and even just snack on it plain. Tofu rocks.

1/4 cup soy sauce
1 1/2 tsp. sesame oil
1 Tbsp. Splenda
1 clove garlic, minced
1 Tbsp. toasted sesame seeds

I use it in my hot and sour soup. I can't say it's good because you can't really taste it. But it's my favorite recipe. It's from epicurious.com.
