Amount Measure Ingredient -- Preparation Method

4 egg yolks, or 2 whole eggs
1 c. sugar
2 tbsp. soft shortening
3/4 c. sour milk
3 1/2 c. flour
2 tsp. baking powder
1 tsp. salt
1/4 tsp. nutmeg
1/4 tsp. cinnamon

Turn onto floured board. Roll dough to about 1/3 inch thick.
Let rise 20 minutes. Cut with doughnut cutter. Heat deep fryer
to 380 degrees. Oil will cool as foods are dropped in.
Keep oil at 370 degrees at all times. If grease is too hot or too cold,
food will not turn out. Drop doughnuts in oil (asmany as can
easily be turned). Turn as they rise to surface and show color.
Fry about 2 or 3 minutes completely brown on both sides.
Lift with fork and place on absorbent paper.
Cool and sprinkle with sugar.

Aunt Rose's Mardi Gras Doughnuts

Ingredients

(6 servings)

2 c Flour
2 tb Sugar
2 ts Baking powder
1/2 c Milk
2 Eggs
1 pn Salt
1 ts Pure vanilla extract
Oil for deep frying
Powdered sugar


Instructions

Mix the flour, sugar and baking powder together in a bowl. Make a well in the middle and add the eggs, milk, salt and vanilla. Beat these together and gradually work on the flour. Roll out on a floured board to about 1/4 inch or a little thinner if preferred.
Cut the dough into 2 x 4-inch strips and simply make 3 or 4 slits in the center of each. Fry in deep oil until golden brown. Sprinkle with powdered sugar.
HINT: These will be firmer than doughnuts.
Yield: approximately 18 to 20.

Spider doughnuts

300g/11oz plain flour, plus extra for rolling
1 tsp baking powder
¼tsp table salt
2 tbsp golden caster sugar
50g/2oz butter, melted
200ml/7fl oz milk
4 eggs, beaten
vegetable oil, for deep-frying
icing or golden caster sugar, for dusting

Method
1. Sift the flour, baking powder and salt into a large bowl. Stir in the sugar and make a well in the centre.
2. Stir in the butter, milk, eggs and 100ml/3½fl oz water to make a smooth, thick batter.
3. Heat the oil in the pan and drop in small spoonfuls of the mixture; cook for 5 minutes until brown and cooked through. Drain on kitchen paper, then dust liberally with sugar and serve.

Doughnuts:

20-25 doughnuts

3 teaspoons Crisco shortening
3/4 cup sugar
3 large eggs
3 cups flour
3 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon nutmeg or mace or cinnamon
6 tablespoons milk

1. Cream sugar and shortening together. Add beaten eggs.
2. Mix and sift dry ingredients.
3. Add alternately with milk to the first mixture. Mixture should be very soft.
4. Form into a ball, place on a well floured board and roll to one-half inch thickness. Cut and fry in hot oil.

Honey Doughnuts Recipe

Ingredients for Honey Doughnuts
3 eggs
½ cup sugar
3 tablespoons vegetable shortening
1½ cups honey
1 cup sour milk
1 teaspoon baking soda
1 teaspoon cream of tartar
1 teaspoon lemon extract
5¾ cups flour
1 teaspoon salt
Instructions
Cream vegetable shortening, honey and sugar well together, then add eggs well beaten, mix well, add milk, lemon extract, flour, salt, soda, and cream of tartar.
Mix and turn out on baking board, roll out and cut with doughnut cutter.
Fry in plenty of hot vegetable shortening.
If a piece of bread browns in hot vegetable shortening in sixty seconds, temperature is right for doughnuts and fritters.
Sufficient for sixty-five doughnuts.

I am a great cook, this isn't the easiest for beginners but you can't learn, unless you try.
If you find one without yeast you may find it easier, but it will not be light and fluffy. Get a good oil thermometer, and a deep pot. Please put it on the back burner and always turn your handles in. God forbid you hit the handle or a child grabs it, no matter what is in it, lives can be ruined and lost so innocently.

first make your dough, make balls of dough about half the size you want the end donut to be and leave them somewhere warm to rise and double in size. once they have you will to fry them in deep oil. you can pump the jam into the middle afterwards and then sugar them
