TANDOORI CHICKEN
Serves 4
1 3 1/4-pound chicken, cut into 8 pieces
1/4 cup fresh lemon juice
1 8-ounce container plain low-fat yogurt
3 garlic cloves, minced
2 tablespoons vegetable oil
2 teaspoons ground cumin
1 1/2 teaspoons chili powder
1 1/2 teaspoons minced peeled fresh ginger
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon turmeric
Pat chicken dry. Cut several slits in each piece. Rub with lemon juice. Combine all remaining ingredients in baking dish. Add chicken to yogurt mixture and turn to coat. Cover and refrigerate 2 hours or overnight, turning occasionally.
Preheat oven to 400°F. Butter baking pan. Arrange chicken skin side up in prepared pan. Roast 15 minutes. Turn chicken and roast 15 minutes longer. Reduce heat to 350°F. Turn chicken skin side up and roast until cooked through, about 15 minutes. Transfer to platter and serve.

Chicken Tandoori (Indian Grilled Chicken)
Yield: 6 Servings
Ingredients
16 oz plain yogurt
1/4 c lime juice
2 cl garlic, finely
1 chopped or pressed
2 ts salt
1/4 ts turmeric
1/2 ts coriander
1 ts ground cumin
1 1/2 ts ground ginger
1/8 ts cayenne pepper
1 (optional)
3 whole chicken breasts,
1 split
1 lg onion, finely chopped
1 lg green pepper,
1 finely chopped
Instructions
In large bowl, combine:
Yogurt coriander Lime juice cumin Garlic ginger Salt
cayenne pepper Turmeric
Stir to mix. Add chicken pieces and toss to coat. Cover mixture and
chicken with peppers and onions. Cover. Chill overnight (or longer).
Prepare hot coals or preheat oven broiler for 10 minutes. Turn and
cook until done, approximately 15 to 20 minutes. Baste with marinade
throughout cooking.

CHICKEN TANDOORI
Tandoori chicken traditionally is slowly baked in clay ovens called tandoors. But grilled Chicken Tandoori is every bit as tasty. Use boneless whole pieces of chicken -- it cooks a lot faster.
Tandoori marinade:
3 tablespoons plain yogurt
1 teaspoon fresh minced garlic or garlic powder
1 teaspoon fresh grated ginger or 3/4 teaspoon ginger powder
1 teaspoon garam masala (you can buy this at Pakistani and Indian grocery stores or substitute allspice)
2 to 3 tablespoons oil
1 teaspoon paprika
8 pieces of chicken breasts, thighs and legs
Cut slits in chicken. Mix all ingredients in yogurt including oil and soak chicken in mixture. Grill chicken on charcoal or bake in preheated 375-degree oven for 45 minutes. Serve with pita bread and salad. Serves 4

3 tablespoons tandoori mix (I use sharwoods),
3tablespoons yogurt,
3 tablespoons cooking oil (not olive),
3tablespoons vinegar,
3 tablespoons lemon juice,
2 chickens- quarted and skinned.
Blend all the mix ingredients together in a bowl. Cut some slits in the chicken to help the marinade penetrate. Put the chicken in the mix and make sure its coated. cover and leave in the fridge over nite. Grill and serve!
