This is quick and easy! I guess it can be called sausage dish or something! It doesn't have a specific name.

All you need is sausage, rice, tomato and onion mix, green peppers, bacon and cheese.

Cook the sausage and then cut into rings and put at the bottom of an oven dish. Fry the bacon pieces and green pepper pieces and then mix with the cooked rice before covering the sausage with it. Add the tomato and onion mix (it's the sauce you get in the tin cans) and then some grated cheese on top. Bake in the oven for about 30 minutes or until the cheese has melted. Serve and enjoy!

White chicken enchiladas
INGREDIENTS
1 tablespoon butter
1/2 cup chopped green onions
1/2 teaspoon garlic powder
1 (4 ounce) can diced green chiles
1 (10.75 ounce) can condensed cream of mushroom soup
1/2 cup sour cream
1 1/2 cups cubed cooked chicken breast meat
1 cup shredded Cheddar cheese, divided
6 (12 inch) flour tortillas
1/4 cup milk
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a large baking dish.
In a medium saucepan over medium heat, melt the butter and saute the green onion until tender (about 3 to 4 minutes). Add the garlic powder, then stir in the green chiles, cream of mushroom soup and sour cream. Mix well. Reserve 3/4 of this sauce and set aside. To the remaining 1/4 of the sauce in the saucepan, add the chicken and 1/2 cup of shredded Cheddar cheese. Stir together.
Fill each flour tortilla with the chicken mixture and roll up. Place seam side down in the prepared baking dish.
In a small bowl combine the reserved 3/4 of the sauce with the milk. Spoon this mixture over the rolled tortillas and top with the remaining 1/2 cup of shredded Cheddar cheese. Bake in the preheated oven for 30 to 35 minutes, or until cheese is bubbly.

I usually double the ingredients and still only use about 8 large shells and serve with rice and top with lettuce, sour cream, shredded cheese and salsa. My entire family loves these!! Good Luck!

How about roasted butternut squash with bacon and sage (Jamie Oliver with Sainsbury and can be find on their website). I made this and added some garlic, cherry on the vine tomatoes and sweet potatoes. It's really tasty. Some nice chunky soups at this time of year are always good - you can add what you want and make up batches to freeze too or a lovely stew. Try looking at the BBC food website (www.bbc.co.uk/food) you can type in certain ingredients and it will suggest recipes to you. Enjoy!

Get a large beef joint out of the freezer - yes - you read right - freezer - stick it in the oven, on 140c, and go out for the day - come home and the house will smell gorgeous - it's dead cow for me everytime, roast pots, parsnips, yorkshire puddings, carrots...etc, etc.,

P.S - you could also try this - eat cold food at lunchtime for a week, supermarket sandwiches that sort of stuff, be really busy at the weekend, no time to cook etc, then plan a day that you know you will be able to spend time cooking, drink wine while you cook - I guarantee it will be the best meal you taste all year - no matter what it is....

...You too? Okay, here's one I tried the week before holidays...it was quick & easy and my family really liked it:

Frozen/Fresh Shrimp
Sun Dried Tomatoes in Olive Oil (like from Trader Joe's...or soak your own SD Tomatoes from the grocery store)
Pasta (enough for the two of you)
Parmesean Cheese
Grilled Asparagus
White Wine
Baguette

Okay-so saute the shrimp on stove top (use light olive oil...or nothing if you use non-stick pan). When pink add - to taste - the SD Tomatoes. Meanwhile boil up your favorite pasta & rinse, cut and broil in butter asparagus 'til browned on top. Heat up cut baguette (or not if you don't like it warm.) When pasta is cooked, rinse and toss in shrimp/sun dried tomatoes & sprinkle on a little parmesean cheese. Serve all together w/ a nice, slightly sweet, white wine......everyone asked for seconds.

For desert I made the chocolate souffle from Joy of Cooking. I served it w/ homemade whip cream....yummy :)

Cut up loads of veggies, add barley and pint of stock and shove it all in a slow cooker for 7 hours or more and come home to a lovely smelling house and a nice warming casserole.

Something that is very delicious and I enjoy is a family fav. Take chicken breasts, pound them with a meat tenderizer so they're flat, roll them with cream cheese in the middle and wrap them with bacon. Bake them in the oven for about 45 min. All will enjoy i promise :)
