Above answers are correct. These animals are more active, searching for food and avoiding predators/being a predator, so, less fat. Fat makes food taste good, this why popcorn is better with Butter and Bacon goes well with Eggs.

Actually it's more of an issue of a biased selection rather than anything in particular about 'exotic animals'.
The link below shows the nutritional information for quite few game animals, and you can see that the percentages vary quite a bit. The reason that you'd assume that exotic meats are healthier is that it's easier to get people to try new things if they believe a benefit exists. As such, the products that get marketed the most are those that can show some special value over the standard (and usually far cheaper) fare of beef, pork and chicken.

The meat we eat regularly is massed produced. Cattle, for instance, are kept inside and fed grains - instead of being able to graze. This produces bigger cows faster for slaughtering. The same is done to chickens and most animals we eat commonly. Most of the time, this meat is injected with a lot of hormones and is also fattier for flavor and preservativity.
Sounds gross, but the reason it is done that way is to feed a huge population, and also to feed people who wouldn't have money necessarily to buy the food otherwise.
The exotic meats are not mass-produced this way - they are natural, and they come from animals that move around and get exercise so they are leaner.

Some 'exotic' meats are wild, and wild animals tend to have less fat. The reason most farmed cow meat has lots of fat is because it's fed a diet specifically designed to make it fat. Also, farmed animals tend to have less room to roam around in.

Game meat is from farmed wild animals, who are leaner to survive and so have less fat. Kangaroo meat is 98% fat free for example.
