Unless you are prepared to expend a LOT of work, money and time into it, you are best spending your efforts buying good chocolate. Here is the wikipedia article on chocolate

How to Make Milk Chocolate Peanut Butter Sauce
Things You'll Need
1/4 c. smooth peanut butter
2 tbsp. water
1/8 tsp. salt
1/2 c. half-and-half
1 tbsp. firmly packed light brown sugars
1 tsp. unsalted butters
1 tbsp. light corn syrup
4 1/2 oz. milk chocolate - chopped
Instructions
STEP 1: In a heavy saucepan, melt butter with brown sugar and corn syrup over medium-low heat. STEP 2: Whisk in peanut butter and half-and-half. STEP 3: Bring mixture to a gentle simmer. STEP 4: Remove from heat and whisk in chocolate and salt until smooth. STEP 5: Whisk in the water and serve warm. Tips & Warnings
You can also serve the sauce at room temperature or chilled; if it gets too thick, whisk in a little more water.

White CHOCOLATE:
How to Make White Chocolate Chunk Cookies
Instructions
STEP 1: Heat the oven to 325 degrees F. STEP 2: Beat the butter, sugar and brown sugar until light and creamy. STEP 3: Meanwhile, stir together the flour, baking soda and salt. STEP 4: When the butter is creamy, add the eggs one at a time, then the vanilla. STEP 5: Add the flour mixture slowly, and when it is almost all incorporated, add the macadamia nuts and white chocolate. STEP 6: Stir together well. STEP 7: Drop tablespoon-sized rounds on cookie sheets and bake for 15 minutes, or until edges just start to turn golden. STEP 8: Remove the cookies from the cookie sheets to cool so the white chocolate doesn't melt too much. Tips & Warnings
White chocolate is not technically real chocolate, because it doesn't contain any cocoa solids. White chocolate is a mixture of cocoa butter, dairy solids, vanilla and sugar. Unfortunately, many white chocolates on the market don't contain any cocoa butter; for this recipe, use only those that do.

It is impossible to "make" them at home, however please always buy a very good quality chocolates for all your needs, cooking, melting, gnashes, etc.
Couple of fun facts, White chocolate is not made from the cocoa plant and therefore is not "chocolate"
Toll house chips use artificially vanilla flavoring in all their products. Non of the store brands do!
Read the labels and understand there is a great deference between milk choc., semi-sweet (half milk and half so called dark and dark chocolate. It is the amount of cocoa that is each that makes the different tastes. A good dark will have at least 60% and now it is "good" for us to eat dark chocolate. Enjoy, before they come out with a new study!

the production of chocolate is complex and difficult, requiring expensive equipment and much specialized knowledge. you would need:
raw cocoa nibs
roasting equipment
a large assotment of mills or an expensive specialised model
tempering equipment
