Say "please don't do that." It's not something that should upset them, except perhaps at being found out in doing something so very rude without your asking them to. Sometimes people get upset when they realize their behavior has been inappropriate, but that's not your problem. Your problem is resisting the urge to throw them out the door!
And as for the cell phone, keep it on your person so they can't get to it faster than you can.

You need to explain that a cell phone is a private line directly to you and you would kindly appreciate it if they did not answer your phone. Tell them you appreciate the kindness in wanting to help but it is not something you are comfortable with.

Say, "Please do not answer my phones... voicemail will take care of any messages. Thanks!"
There shouldn't be any argument about this. If there is, explain to your guest that you are expecting business calls and it is best if you don't answer for the calls to go to voicemail, not a stranger. Or you could just say, "While you stay in my house, those are the rules."

I agree with the very first answer, after all they are a "GUEST" in your house and unless you give them permission to answer your phone then they should not be doing so

Say to them "so and so, would you mind allowing me to answer any calls from my phones because I don't want the person who's calling to think they got a wrong number and to avoid having to explain to them who you are."

If this is done by a close personal friend, then you probably wouldn't care. But for a casual acquaintance to do this, I would just tell them, as politely as possible, that I'd prefer if they didn't do that.
