Saurkraut balls

1 bag of kraut drained
1 # bulk sausage, like Jimmy Dean
1 8 oz package cream cheese
flour for dipping
eggs for dipping
bread crumbs for coating
1. Mix kraut, sausage and cream cheese in a bowl. If it is too sticky, add a little bread crumb to get it to a consistancy you can roll in to a ball
2. Roll each ball in flour, then egg then in bread crumbs. Place on greased pan.
3. Bake in oven at 350° for 20 minutes or until golden. These can also be deep fried if that is your preference. When I became health consious I started baking them and liked them even better than fried.

I have 2 in my files. One has cream cheese, which you don't want but here is the other:
1-2 eggs
1 lg. can kraut
4 slices bacon
2 bay leaves
2-3 lb ground meat
1/2 cup (RAW) rice
Jar or homemade spaghetti sauce(not much)
1 small onion
1-2 cloves garlic(minced)
caraway seeds(optional)
Cook rice till almost done. Drain and rinse kraut. In bowl put meat, salt, pepper(to taste) garlic, egg or eggs(depends how much meat you have) and rice. Mix well Form into meatballs.
Put bacon slices in bottom of pan with 1/2 of the kraut.
put meatballs on top of kraut layer. Add rest of kraut on top. Add enough spaghetti sauce to give it a nice color. Throw some caraway seeds over top plus the onion.(Can sprinkle little between layers too if you like instead of just on top) ADD JUST ENOUGH water to cover. Cook UNCOVERED till it boils. REDUCE heat and cover and cook SLOWLY for 1 to 1 and 1/2 hrs. ...This was given to me by an old Italian lady many years ago. It DOES NOT taste like spaghetti sauce. I didnt think I would like it but it is great.

Sauerkraut Balls
Ingredients
(75 servings)
1 Onion, chopped fine
3 tb Unsalted butter
1 c Cooked ham, finely chopped
1 c Corned beef, finely chopped
1/2 Garlic clove, minced & mashe to a paste
6 tb Flour
2 c Sauerkraut, drained & choppe fine
1 tb Fresh parsley, finely choppe
1/2 c Beef broth
1 lg Egg
2 c Milk
2 1/2 c Flour
4 c Dry bread crumbs, fine
Vegetable oil for frying
Instructions
In a large skillet, cook onion in the butter over mod-low heat, stirring, until softened. Stir in ham, corned beef, and garlic. Cook the mixture, stirring, for 1 minute. Stir in 6 Tbsp flour and cook mixture over moderate heat, stirring, for 3 minutes. Stir in kraut, parsley, and broth and cook for 3 minutes or until it is thickened and paste-like. Spread mixture on a platter and chill for at least 3 hours.
In a bowl, whisk together the egg, milk, and 2 1/2 cups flour. Shape the kraut mixture by level teaspoons into balls, dip them into the egg mixture and roll them in the bread crumbs.
In a kettle, heat 2 inches of oil to 375f on a thermometer. Fry the balls in batches for 2-3 minutes or until golden brown. Transfer to paper towels to drain.
Makes about 75 sauerkraut balls.

jenivive got it. allrecipes.com is my favorite site for recipes. and they are all rated. ive never heard of sauerkraut balls, now you have peaked my interest. i love trying new foods. LOL and you ask for a recipe with no cream cheese or sour cream and shelley girl gives you one with cream cheese. its still early, poor girl must still be sleepy.
