It's my New Year's Resolution for 2007 to save money and calories by not buying my lunch out when at work, but I'm out of ideas for tasty fillings for sandwiches, baguettes, pittas or wraps which are relatively low-fat and low-cost.

I'm an unfussy eater, and I love trying new and adventurous food. I don't want to be stuck with soggy cheese and tomato offerings, but walking round supermarkets doesn't give me much sandwich inspiration. Does anyone have any sexy sandwich suggestions?

I am a personal chef for some families and I make sandwiches of all sorts:

Take a wrap, smear with 1/4 cup of hummus, add some grated carrots, super thin sliced apple and one slice of turkey. Add lettuce or spinach if you like. Roll it up and cut it in two. Cheap and different!

Chicken salad with a twist. One can of chicken meat is about $3.50 which seems expensive but it's cheaper than a whole meal out and it will make 3 big sandwiches. Drain the can of chicken, chop up some celery, walnuts, dried cranberries or cherries, add a bit of mayo (even low fat mayo is good in this), add salt and pepper to taste, line a pita pocket with lettuce and fill with this crunchy, unique chicken salad. I love the dried fruit in it. Mmmm.

BLT...You can make a wrap or a sandwich. Spread the bread or the wrap with a bit of mayo, add extra lettuce to protect the bread from the tomato (no soggy sandwiches!) add a few slices of bacon and some sliced tomato.

"salad" sandwich. Mix a bowl or plate of your favorite salad ingredients. Cut them up more than usual, bring a little container of dressing and pita pockets cut in half. When you get ready for lunch, add the dressing to the cut up veggies and then stuff them in the bread pocket. Addicting!

Grilled Ham & Cheese with spicy mustard. Even if you grill it at home in advance, it's still good if you let it cool on a rack (to help keep it crispy). Then wrap it in a bit of brown paper and then a baggie. It's different than a fresly grilled sandwich but really tasty.

Chicken caesar wrap. Cut up left over chicken and mix it with a little caesar dressing. Get a wrap, layer with lettuce leaves, toss on some chicken and sprinkle with parmesan cheese. Really strong flavor!

Make a pork wrap. Left over pork from a dinner. Chop it small. cut a little cabbage like you're making a slaw. Mix in some rice wine vinegar, some toasted sesame oil and a little soy. Toss it with the pork pieces and throw it in a pita or on a wrap with lettuce. Super tangy and "asian" tasting.

Roast beef slices with horseradish mayo! On bread or a wrap. A big strong taste but with just a few slices of meat it's not that bad for you!

Yes the bread with egg is great. My friend turned me on to those years ago, but with out the sandwich, just the bread and egg by themselves. She calls them glass houses. Yum! My kids have been opening their sandwiches up and putting the chips inside to give it a crunch. Buy some healthy chips and they won't know the difference. I also make BBQ sandwiches like the restaurant I used to work at. Ingredients: small hamburger buns mustard relish bbq sauce leftover pork or beef All you need to do is chop the meat up and put it in a pan with however much sauce you want and cook it for about 30 minutes or so. Toast the buns in a skillet or on the grill. Put mustard and relish on the bottom bun and top with bbq meat. Add more sauce if you like and the top bun and enjoy! And yes my kids add their chips to this, too! I have never tried chicken or turkey but that is an idea. Let me know if you try it with this.

How about some taboulleh (prounounced ta-boo-lee) and hummus? Very tasty! Can place it in a sandwhich wrap with some fresh arrugula or spinach leaves.

I also love tuna fish (if I'm not making tuna steaks myself I'll use chunk white in WATER not oil-and drain the tuna first) on top of some fresh spring greens with some diced yellow peppers, thin zucchini slices, grape tomatoes and drizzled with some zesty italian dressing. Great for a salad, in a pita, with some toasted pita chips or in a wrap! You can also make a yummy cucumber and yogurt spread to add some more flavor (just 86 the zesty italian dressing; they don't mix well! LOL)

And kudos to you for a GREAT New Year's resolution!

This is my favorite sandwich recipe in the world! Just bring the vinaigrette in a separate container to work and it shouldn't get soggy.

Eli's Mozzarella, Tomato, and Basil Sandwiches
Makes 3-4 Sandwiches

1 loaf ficelle (any Italian or French crusty bread will work fine)

2 tablespoons Dijon mustard

2 tablespoons corn oil (I use extra virgin olive-oil instead)

1 teaspoon sherry-wine vinegar (balsamic vinegar works also)

2 red or yellow tomatoes

8 half-inch slices fresh mozzarella

10 to 15 whole basil leaves

Freshly ground pepper

1. Slice ficelle loaf down the top center, taking care not to cut all the way through. Spread halves open.

2. Make vinaigrette: In a small bowl, combine Dijon mustard and corn oil, and whisk until emulsified. Add sherry-wine vinegar. Whisk to combine.

3. Layer tomatoes in pocket of bread. Layer mozzarella on top of tomatoes. Grind pepper over top of sandwich.

4. Pour vinaigrette over tomatoes. Add basil leaves to top of sandwich. Cut sandwich into individual portions.

When I take sandwiches to work, I pack the items seperately
in zip locs - then I assemble the sandwich at work.
I keep a small botlle of mayo + creole mustard in the fridge @ work.
Tastes much better when made fresh,Veggies are crisp,
meat + cheese don't get soggy.

Kaiser roll
Cooked shredded Pork, Chicken or Beef (great for left overs)
Shredded Carrots (adds a good crunch to the sandwich)
Thinly sliced Red Onion
Thinly sliced Bell Pepper
I like a little chopped Sorrento Peppers as it adds a nice kick
Mayo
Bar-B-Que sauce

Enjoy

Try hummus (NOT hagus... lots of people confuse that) with lettuce and such! Try it in a pita pocket.

One of my favourite things to bring to work is a ceaser salad pita. Use some left over chicken and toss it with bacon bits, crutons, paresean, and romaine. Bring dressing in a seperate container, and then toss it at work and stuff it into a pita. Healthy and filling!

There is the ever popular peanut butter, banana and honey sandwich... quite sweet!

Well, I am like you on the saving $ and not eating out!

If you like tuna, you can spice it up by putting pineapple in your tuna. I normally Keep my bread and tuna seperate in baggies, and make the sandwich right before I eat it.

You can also try a turkey bacon rap. You can add mayo, mustard, pineapple, cheese, anything like that. Pineapple always adds a yummy twist to any sandwich, and believe it or not, it tastes good in just about anything or with anything.
